Ingredients
- 4 boneless, skinless chicken breast halves
- 1 (12 ounce) package farfalle (bow tie) pasta
- 1 (14 ounce) can chicken broth
- 1 head broccoli, cut into florets
- 1 medium red bell pepper, thinly sliced
- 2 cloves garlic, minced
- salt and pepper to taste
- 2 (8 ounce) containers chive and onion cream cheese
- ¼ cup freshly grated Parmesan cheese
Instructions
- Place chicken in a saucepan, and add water to cover. Boil 20 minutes. Allow to cool, then pull meat into shreds.
- Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes, or until al dente; drain.
- In a large skillet over medium-high heat, combine chicken broth, red pepper, garlic, broccoli, salt and pepper. Cover, and simmer for 8 to 10 minutes, until broccoli is crisp-tender. Stir in cream cheese until smooth. Mix in chicken and pasta until evenly coated. Garnish with Parmesan cheese.

For some oomph, I added a 4oz can of diced green chilis. Used 1 container light cream cheese and because I had it, some heavy cream (1/4 cup) with some corn starch (2 tsp). I’m sure I won’t have cream next time so will leave it out – cut down on calories. DELICIOUS
Great! Easy to make! I followed directions exactly as they called for. The kids actually ate this without complaining!
Ill just say its one of my go to’s for dinner. Its my kids favorites and will frequently request it. Easy and fast to make.

I thought this to be very bland until I added red pepper flakes to it.

This recipe nail my expectations although I used a dark meat instead of chicken breast it still came out light and full of flavor. The only thing about this recipe that I wish was different is the amount of sauces the end. Next time I will use just a little more chicken broth to create a little more sauce to go with the garlic bread I made on the side
It was great! I altered it significantly to be a previous pasta and cream cheese recipe using a cream cheese product that is no longer available.
Delicious! The only thing I will do different is bake the chicken. You loose too much flavor when it is boiled.

This recipe was a big hit with J. Made a few changes for added nutrients and flavor — *Fire roasted the red pepper, and added store bought fireroasted tomatos. Added a little after the broccoli began to soften. *Only used one container of cream cheese. *Used marinated chicken breast tenders cooked 10 minutes at 350. Added to sauce to finish cooking. *Would add mushrooms to the sauce and a separate colorful side like baby carrots or something. *Served with fresh garlic bread

I made a couple of slight changes to the recipe. First, I added some sliced mushrooms to the pepper and broccoli. I also pan fried the cut up chicken breasts. I added some dried oregano and rosemary to the chicken while cooking. The flavored cream cheese produced a nice alfredo sauce. My wife really enjoyed but chose not to add parmesan cheese.
Very similar to Jean’s heavenly slow cooker chicken which we love. So used that sauce recipe and after done cooking in slow cooker continued on with this recipe
Meh…VERY blah. Need more spices or something; maybe red pepper flakes? Im sorry – we didn’t like at all.
