Ingredients
- 1 cup vanilla-flavored unsweetened almond milk
- 1 cup plain low-fat (2 percent) Greek yogurt
- 2 tablespoons pure maple syrup (preferably grade B), plus 4 teaspoons for serving
- 1 teaspoon pure vanilla extract
- Kosher salt
- 1/4 cup chia seeds
- 1 pint strawberries, hulled and chopped
- 1/4 cup sliced almonds, toasted
Instructions
- In a medium bowl, gently whisk the almond milk, yogurt, 2 tablespoons maple syrup, the vanilla and 1/8 teaspoon salt until just blended. Whisk in the chia seeds; let stand 30 minutes. Stir to distribute the seeds if they have settled. Cover and refrigerate overnight.
- The next day, in a medium bowl, toss the berries with the remaining 4 teaspoons maple syrup. Mix in the almonds.
- Spoon the pudding into 4 bowls or glasses; mound the berry mixture on top and serve.

This has become a breakfast staple at my house. My husband loves it! We folllow the recipe and top with toasted coconut and fruit in addition to the toasted almonds. DELICIOUS and nutritious!
I never take the take to write a review, but this was that good. Delicious! I used coconut milk based yogurt instead since I am avoiding dairy .
Made it with a can of coconut milk instead if almond milk and a small container of coconut vanilla yogurt instead of greek yogurt. Great!
I’m unsure, I just made this and it does not come out pudding consistency. I tried it with almond milk which taste like playdough, and oat milk, but it comes out to like a thinner yogurt consistency. it tastes good but im unsure what the desert was supposed to taste like as it was not like the images.
This is easy, healthy and delicious.
I made it by adding 1 1/2 tablespoons of cocoa, and 1/4 t instant Expresso. Yummy!

First time trying chia seed pudding and love this recipe. I like the addition of Greek yogurt which most recipes don’t include. I did not add extra maple, just a mix of blueberries and blackberries, but any fruit would be great with this.

half almonds half hazelnuts
subbed maple syrup for 1 tablespoon of honey (plenty sweet!)
threw into a pot frozen fruit with 1 ounce monk fruit sweetener, lemon squeeze, and pectin, which I cooked to a nice thin jam consistency
And it turned out so wonderful! I prepped these in 6 little mason jars to grab for an on-the-go breakfast. So delicious!

I clicked to get to this after going down a few rabbit holes I finally made it. I am sorry I did. I am not pleased with chia seed pudding. It’s like chewing into an ants nest. Not thank you. I couldnt tell what it was and it was looking yummy in the small photographs that were linking to the gallery that ultimately, finally linked to a full size view of the breakfast meal. Texture and insect egg like appearance makes me say no to sharing this recipe. But I will give a five star score for effort and modernization. I think it’s a bit much. 🙂
