Chia Seed, Coconut, and Raspberry French Toast Sticks

This quick, simple, and delicious breakfast is also healthful. Every time I serve it, it’s a big hit. Enjoy!

Ingredients

  1. 3 thick slices whole grain bread
  2. ¼ cup coconut
  3. ¼ cup chia seeds
  4. ¼ cup half-and-half
  5. 2 eggs
  6. 1 tablespoon white sugar
  7. 1 ½ teaspoons ground cinnamon
  8. 1 teaspoon vanilla extract
  9. ½ teaspoon salt
  10. 2 teaspoons unsalted butter, or as needed
  11. ½ cup fresh raspberries
  12. ½ cup vanilla yogurt
  13. 2 ounces maple syrup, or to taste

Instructions

  1. Cut each bread slice into 4 even sticks.
  2. Mix coconut, chia seeds, half-and-half, eggs, sugar, cinnamon, vanilla extract, and salt together in a bowl until batter is smooth.
  3. Heat a large skillet over medium heat and add butter.
  4. Dip bread sticks in the batter until completely coated.
  5. Cook coated bread sticks in the hot butter until browned, 2 to 3 minutes per side.
  6. Place raspberries in a microwave-safe bowl; heat in microwave until softened, about 1 minutes. Mix yogurt into raspberries.
  7. Dip French toast sticks in raspberry-yogurt sauce and top with maple syrup.

I think this was a good idea but there was too much chia seeds. I followed the instructions and the french toast mix had been absorbed by the chia seeds. Half of the bread slices didn’t have enough batter to coat. I liked the coconut. It added a nice flavor. If I were to adjust this recipe and make it again, I would suggest using almond milk, coconut milk, or soymilk. I would use half of a cup instead of a quarter cup. I would use 2-3 eggs or 2-4 egg whites, and maybe 3tbs of chia sprinkled on the toast sticks after they are in the pan.
