Cherry-Almond Dump Cake

This cake is rich and dense because of the coconut and nuts. Using smashed cookies in place of flour makes it incredibly simple to create.

Ingredients

  1. cooking spray (such as Pam®)
  2. 1 teaspoon almond extract
  3. 2 (21 ounce) cans cherry pie filling
  4. 1 (15.25 ounce) package yellow cake mix
  5. ½ cup cold unsalted butter

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Spray a 9×13-inch baking dish with cooking spray.
  2. Stir 1/2 teaspoon almond extract into each can of pie filling.
  3. Pour both cans of pie filling into the prepared baking dish. Sprinkle cake mix evenly over pie filling. Grate cold butter over top, distributing it as evenly as possible.
  4. Bake in the preheated oven until topping is golden brown, 50 to 60 minutes.

This is a very easy and tasty recipe. However, I learned to make it with a can of crushed pineapple and a can of cherry pie filling. I also add a cup or so of toasted walnuts. You can’t screw this up – that’s why I like it!

Full disclosure, i’ve never made a dump cake nor have I ever eaten one. That being said I probably won’t make or eat one again. If there’s anyone else like me whose never made or eaten dump cake, here’s a few things I did so it wouldn’t seem so much like a syrupy sweet concoction. I used gourmet cherry fruit spread vs pie filling because those are way too sweet. I also used organic-gluten free cake box mix I typically buy from natural grocery stores, like Whole Foods Market. I also melted the butter before vs placing slices over top of the dry cake mix. It was an interesting experience.

This is pretty good. But a little sweet for us. I used no sugar added cherries to try and keep the sweetness level down. Don’t get me wrong we liked it, but just need a small portion to meet your sweets craving.
