Cheesy Potatoes with Smoked Sausage

Ingredients

  1. 1 (1 pound) package Hillshire Farm® Smoked Sausage
  2. 1 (20 ounce) package refrigerated shredded hash brown potatoes
  3. 2 cups shredded Cheddar cheese
  4. 1 cup sour cream
  5. 1 medium onion, chopped
  6. ¼ cup butter or margarine, melted
  7. ¼ teaspoon ground black pepper

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a 13×9-inch baking pan with a non-stick cooking spray. Cut sausage into 1/2-inch cubes. Combine all ingredients in a large bowl.
  2. Spread mixture evenly in the prepared pan. Bake for 40 to 45 minutes or until lightly browned. Let stand 5 minutes before serving.
  3. Substitutes: beef smoked sausage, lite smoked sausage, or turkey smoked sausage.

I used fresh potatoes that I shredded, since I didn’t have any frozen. This made the texture of the potatoes a little weird because they were shredded to thin. My husband loved it but the rest of the family wasn’t impressed. I will try again with frozen potatoes. Overall it is an easy dinner and something different during a busy week.

I really enjoyed this. I subbed smoked turkey sausage, light sour cream, and omitted the butter. Saved a bunch of calories and it was still delicious! I used thawed frozen hashbrowns and it worked just fine. Will make again.

This is a great basic recipe that can be altered 16 ways to Sunday if you’re not afraid of that. I don’t think I have ever made a recipe the same way but there are so many good ideas from cooks here that like to explore options. I’m making this with some leftover packets of Horsey Sauce from Arby’s. Just tell me that a little horseradish sauce added don’t sound good with smoked sausage and, yes, I’m going with hash browns and cream of celery soup. Love, love, love good cooks that can wing it!

I used some of the ideas from other reviewers. I used potatoes O’Brien and added a can of Campbell’s cheddar soup. After cooking for a half hour I sprinkled more cheddar cheese on top and baked for 15 more minutes.

This was delicious and easy! I was on a mission to use food I already had on hand and this worked great! Others had suggested sour cream or soups which would definitely work. I had a full package of frozen breakfast potatoes, 1/2 cup of sour cream, 1/2 block of cream cheese, 1/2 stick of butter, 1 half onion, and full Hillshire sausage. I added in a dash of hot mustard, a few drops of Frank’s got sauce, onion salt, and a dash of worcestershire. You could easily add more veggies to this to make it more healthy.

Tried substituting with frozen hashbrowns–bad idea! Also, the sour cream was a bad idea. If I made it again, I might add a cream soup, and I would definitely add salt and garlic powder.
