An easy, cheese-filled potato soup. Making this soup takes less than an hour. If you prefer a thicker soup, smash the potatoes with a fork.

Ingredients

  1. 6 tablespoons unsalted butter
  2. 1 ½ cups chopped onions
  3. 1 ½ cups chopped celery
  4. 4 cups water
  5. 8 potatoes, peeled and cubed
  6. 15 slices American cheese – broken into pieces
  7. 4 tablespoons all-purpose flour
  8. 2 ⅓ cups milk
  9. 2 tablespoons chopped fresh parsley

Instructions

  1. Melt the butter in a large pot over medium heat. Saute the onions and celery in the butter for 5 to 10 minutes, or until tender.
  2. Stir in the water and potatoes, bring to a boil and then simmer until the potatoes are tender. Add the cheese and stir until melted.
  3. In a separate small bowl, combine the flour and the milk and stir well until the flour is mostly dissolved. Pour this into the soup slowly, stirring constantly, until soup has thickened, about 5 minutes. Garnish with the parsley.

I used chicken broth instead of water. Instead of cheese slices, I used 2 cups of shredded cheddar jack. Delicious!

It was good, I put it in a bread bowl.. The changes I made were removing the onions from the recipe and adding taco shredded cheese at the end.. (still used the other cheese as well)

Yes I will definitely be making it again. Very quick to prep and easy to cook. The only change I made was adding diced up ham. Just because my boys like their soups to be meaty.

The ingredient, “eight potatoes”, is vague, since they can vary in size. Two pounds worked out well. I cut back on fat and calories by using skim milk and reduced fat shredded Colby Jack. It wasn’t noticeable at all. I used chicken broth instead of water, and tossed in some halved baby carrots to cook with the potatoes. This was delicious soup!

This turned out AMAZING! I used the Colby jack shredded cheese for ours. I put in bacon crumbles and garnished with more cheese! (I love my cheese ??). My kids even loved it and the don’t like soup of any kind. For me not being very domesticated in the kitchen, it was a win for me!

Love cheesy potato soup and this recipe had worked out great, love it, thank you for posting it. Haven’t tried it with chicken stock yet but think I will next time. Did add a little garlic salt and of course to go on top after served, lots of bacon bits!! So yummy!

Some nice warm soup for a cold day. I made a few modifications, ..I used grated gouda and havarti , instead of processed ‘american’ cheese. ( because I had them on hand and love the creaminess that gouda gives to a soup). And a little dash of salt and pepper.

8 potatoes was way too much! It barely fit in my pot. But when we finally ate it, it was bland. It didn’t have much flavor to it and will need to tweak the recipe for next I make it.

Didn’t need the flour thickener. I found you can just about use the amounts of ingredient measured the way you feel it will work. It’s very good. Seems it’s the type of ingredients-fresh, sliced cheese etc that makes it. It’s worth your time to try it!
