With bacon, cheese, green onions, and sour cream, this is a unique kind of potato salad. Not the potato salad your grandmother made!

Knew it would be too sweet with the full amount of sugar, I cut it in half and it was still too sweet. I didn’t have red potatoes so I used russets which I peeled and sliced with the thicker slicing disk of my food processor…a bit under 1/4″. I put the slices in cold water while I boiled water and the slices needed only 6 minutes to be the right consistency. I also added some salt. Would definitely make this again.

I added more bacon and cheese. Next time I make this, I will definitely skip the sugar.

I made this with the exception of I mashed the potatoes and layered them with the other ingredients everyone loved them

Wonderful! Like others said, I left out the sugar and used real bacon.
Monica Benson
I added more bacon, a tablespoon of mustard, a teaspoon of white vinegar and 5 hard boiled eggs.

Made with 1 cup sour cream and 1 cup mayo. And fried and crumbled almost 1lb of bacon in instead of the Tbsp. Didn’t add the sugar. So with MY changes, 5 star. I will make it again.

As other reviewers suggested, I chose not to add sugar and thought it was good without. I also added a can of chunk chicken breast for more protein to make it a meal.

I made this today and it is so good!!! Instead of green onions I used bell peppers, a pack of hidden valley ranch seasoning, real cooked bacon, just a dab of sugar, salt, pepper, mayo, cheese, sour cream and a little ranch dressing!!!! My kids loved it.

Yum Yum Yum!! I have made this recipe with and without the sugar and prefer it with the sugar! At first the sugar is strong.. but if left to sit overnight all the flavors meld perfectly!

Liked this! A different spin on potatoes salad. I think next time I will add some ranch dressing in the mix. If anyone is looking for something different, I would recommend this.

I added celery because I like to have some crunch in my potato salad. It was good, but I can’t say I was wowed.

This is a great and quick addition to your grilling meals. I have made it several times, some exactly to the recipe, other times with no sugar. Both are great. Simple, fun and tasty. Must keep.

Wish I had read the reviews before I made this…. will definitely leave the sugar out next time around – otherwise, terrific!

This recipe is amazing with only a couple of minor adjustments. I left out the sugar and used real bacon that I just cooked and crumbled. Also, the potatoes we kind of bland so I made sure to salt the cooking water to give them just a little bit more flavor without changing the overall profile of the dish.

Big hit at a summer picnic! Loved it!

Very nice for a change from the routine potato salad. Only change I made was I used Hidden Valley bottled ranch dressing with the mayonaise for a slight ranch flavor and deleted the sugar. We will make this again.

I had high hopes on this based on reviews, and I’m really shocked no one said to add salt. Totally needs salt. I made this and added celery because it had no bite – which may be a southern thing but I thought a must. Added salt and pepper, added 1/2 pound fried bacon crumbled. It was good but will probably stick to my potato salad I’ve made for years.

I think it needs a bit of salt and additional bacon. I will leave out the sugar next time as others have suggested. It it pretty sweet, but still good.

I typically do not like potato salad but LOVE this one. I do not add the sugar. Did add salt and pepper and real bacon.

I had to add in many other things to make it half way palatable. I wish reviewers would rate the recipe as it is written, and not with their own revisions.
