Cheesy Mashed Potatoes with Cubed Ham

Despite being a Hanukkah tradition, latkes (potato pancakes) are delicious all year long. In my opinion, my mother’s recipe for potato latkes is the best one I’ve ever had. Because they sell out so rapidly, I frequently wind up producing a second batch. Although I’ve tried various recipes, I always come back to this one. Beautiful when served with applesauce or sour cream.

Ingredients

  1. 5 baking potatoes, peeled and cut into 1/2-inch cubes
  2. 1 cup butter
  3. 1 ½ tablespoons garlic powder
  4. 1 tablespoon dried parsley
  5. 1 ½ cups shredded Cheddar cheese
  6. 1 pound cubed cooked ham

Instructions

  1. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain. Transfer potatoes to a bowl; add butter, garlic powder, and parsley. Mash with a potato masher. Stir in Cheddar cheese and ham.

This is definitely a quick, easy and delicious recipe! My crew are not fans of ham so I added 1/4 cup of sour cream and replaced the ham with bacon. It is now a favorite!

Delicious! I used a hickory smoked cheddar and less cheese than called for since the hickory taste was so potent. Also more of a chives than a parsley person. It turned out great!

We make this often, and it is always fantastic just as written, although I have never added the ham. It seems like a lot of garlic, but we love garlic so it’s perfect for us.

1 1/2 T is a lot of garlic powder – I cut it back to about 2 tsp. and it was plenty. Also, I cut the butter back and added some milk to mash the potatoes. With a few adaptions this would be a good recipe for using up the leftover ham and potatoes after a holiday meal.
