Cheesy Hamburger Stew with Rice

Ingredients

  1. 1 pound ground beef
  2. 1 medium green bell pepper, chopped
  3. ½ large onion, chopped
  4. 2 cloves garlic, minced
  5. 1 (10.75 ounce) can condensed tomato soup
  6. 1 (14.5 ounce) can diced tomatoes
  7. 1 ½ cups frozen mixed vegetables
  8. 1 cup shredded sharp Cheddar cheese
  9. ½ cup water
  10. 2 tablespoons Worcestershire sauce
  11. 1 tablespoon soy sauce
  12. 1 teaspoon garlic salt
  13. ½ teaspoon chili powder
  14. salt and ground black pepper to taste
  15. 2 cups cooked brown rice, warmed

Instructions

  1. Heat a large nonstick skillet over medium-high heat. Cook and stir hamburger, bell pepper, and onion in the hot skillet until meat is browned and vegetables are soft, 5 to 7 minutes. Add garlic; cook until fragrant, about 30 seconds. Drain and discard grease.
  2. Add condensed soup, vegetables, Cheddar cheese, water, Worcestershire sauce, soy sauce, garlic salt, chili powder, salt, and pepper. Cook, stirring occasionally, until vegetables are hot and cheese is melted, 10 to 15 minutes.
  3. Serve stew over warm brown rice.

Just to be upfront I’ve never followed a recipe completely including my own recipes. This is a very good recipe and easily adaptable. I altered the protein to ground beef and Italian sausage, and fresh veggies I had on hand, I served it over an egg noodel then baked it, smothered with cheese then baked it one last to melt the cheese. This dish could easily become a soup just add water.

Hacked it a bit to use ingredients I know kids will eat. Carrots/corn vs mixed veggies. Also added rice to the pot to make it easier for serving. Just enough flavor to serve on its own, but can leave a little hot sauce on the side for those that like a kick!!

This recipe is boring. Made it as said and it looked like soup, so I served it in a bowl. It was still mush with no redeeming flavor. Pulled this one out of my book. Zero stars and I’m not the tough one in the house.
