Cheesy Broccoli-Stuffed Chicken Breasts

Since I dislike eating soup in the summer, I came up with these broccoli, cheese, and rice-stuffed chicken breasts to sate my yearning for broccoli and cheese soup.

Ingredients

  1. nonstick cooking spray
  2. 1 ½ cups finely chopped broccoli
  3. 4 ounces sharp Cheddar cheese, cubed
  4. ½ cup cooked white rice
  5. ¼ cup chopped onion
  6. 1 teaspoon salt
  7. ½ teaspoon garlic granules
  8. 4 (6 ounce) skinless, boneless chicken breasts
  9. 1 tablespoon tropical poultry rub (such as Savory Spice® Gold Coast Poultry Rub)

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Coat an 8-inch square casserole dish with cooking spray.
  2. Combine broccoli, Cheddar cheese, rice, and onion in a medium bowl. Add salt and garlic granules; mix well.
  3. Cut a deep pocket into each chicken breast with a sharp knife. Stuff each breast with broccoli-cheese mixture, place in the prepared casserole, and sprinkle with poultry rub. Cover casserole with aluminum foil.
  4. Place in the preheated oven and bake for 25 minutes. Remove foil and cook until chicken is no longer pink in the center and the juices run clear, about 10 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Took longer to cook than stated. Increased the temp to 400 and added 15 minutes with the foil off.

As always, I use recipes as suggestions. With this one I seasoned the rice as I knew it would make the dish bland otherwise. Remember to season the rice with the same seasoning as your chicken and at it to the water BEFORE it begins to boil. It’s too hard to add seasoning to cooked rice. This dish DEFINITELY needs a sauce. I recommend Hollandaise or Beranaise sauce. These sauces will mimic “sauce” in broccoli cheese soup.

My family absolutely LOVED this! The chicken was so moist & delicious. I had extra stuffing left over after stuffing the breasts so I just laid it on top of the chicken. I made 6 breasts, so baked it for 45 min. with the foil on & then removed it like the recipe said & baked it another 10 min. I didn’t have a poultry seasoning rub, so just sprinkled an all purpose seasoning salt on it. I also didn’t have garlic granules so I used garlic powder & it came out wonderful. This is now one of our favorite chicken dinners! Can’t go wrong with this one!!

It was very juicy and delicious. We are avoiding carbs so we skipped on the rice. Someone reviewed this recipe and said it was bland, their family didn’t like it. That’s up to you because you add whichever chicken seasoning you want on the chicken. Will be making it again. Easy quick recipe thank you for sharing!

Not bad. Very much needed more cheese and more seasoning. But over all it tasted delicious o nce a few tweaks were made. I added a homemade au gratin sauce and it made a world of difference and some Tony Chacheres

Wanted to try this since it looked so yummy. I didn’t have everything on hand so I had to make some substitutions. I used quinoa instead of rice and omitted the onion. I also had to use a rub I had in hand. It still turned out delicious. I will definitely make this again with the ingredients called for.

I have made this twice, both times without the rub (what the heck is tropical poultry seasoning?) The first time it was just ok, not much to write home about (hence the three stars). I knew the recipe had potential, so I tried again a month later, but I swapped the cheddar with 8oz of Velveeta cheese. It was much better, more like 4 stars, and I plan to make it that way again.

it was very easy to make ,really quick and easy, did make a few changes used bone in breasts and skin on. seared the breasts first in a cast iron skillet, for 4 minutes a side, then placed the stuffing in, meaning the broccoli, rice I also added spinach, I must say it went over very well
