Ingredients

  1. 1 pound ground beef
  2. 1 tablespoon butter
  3. 2 zucchini, sliced 1/2-inch thick
  4. 1 tablespoon dried minced onion
  5. 2 cups water
  6. 1 (5.5 ounce) package Knorr® Rice Sides™ – Beef flavor
  7. 2 tomatoes, diced
  8. 1 tablespoon Worcestershire sauce
  9. 1 cup grated Cheddar cheese
  10. Salt and black pepper to taste

Instructions

  1. Brown ground beef in skillet over medium to medium-high heat, stirring to crumble. Transfer browned beef to a bowl.
  2. Melt butter the same skillet; add zucchini and saute until just slightly softened, about 5 minutes.
  3. Return ground beef to skillet along with dried onions, water, Knorr® Rice SidesTM- Beef, chopped tomatoes, and Worcestershire sauce. Bring to a boil over high heat. Reduce heat to low; cover and cook for 7 minutes. Top with cheese. Let sit 5 minutes before serving.

This was surprisingly tasty. I did make a few changes based on what I had on hand. I used 2 lbs. of ground beef, fresh onion, 1 cup basmati rice and 2 cups water with beef bouillon in it and a can of tomatoes with green chilis. The rest as written. I had to cook for 15 minutes for the basmati rice. The zucchini was still crisp tender. We loved it and my husband said to definitely make it again.

Maybe 3 1/2 stars because it was only meant to be a quick throw together with ingredients I already had in the house. I used beef rice a roni and about 1/3 of fresh diced onion. Decent quick weekday dinner. My fam decided they liked it scooped up with tortilla chips…worked well as a nacho dip

Yes. This was so good!!! I did use two boxes of Fried a rice flavored Rice-a-Roni and added beef bullion. Yum!

Excellent! How can you go wrong when the lowest rating is 4 stars! The only change I made was that instead of the tomatoes, I put in about a cup of medium salsa. Gave it just a little “kick”.

Pretty good. I used this as a base for my recipe of what I had on hand. It was pretty close. I had a pound of ground beef and 2 zucchinis. No dried onion or the rice mix, so I just used a small yellow onion and a cup of rice. Also used a can of diced tomatoes. I sautéed the beef with the onion, then added rice, tomatoes, water salt, pepper, some cayenne pepper, Worcestershire sauce, and a little garlic salt. While that all simmered for 15 min or so, I sautéed the zucchini with a little oil, garlic salt, and pepper, then added to the beef and rice mixture. I also thought it needed a little brightness to the dish, so just added some lightly dried basil and lime juice. Topped with some cheddar jack. Would probably be good topped with a little sour cream or plain yogurt (neither of which I had).

Easy and tasty. Seems like it could be very adaptable, and any vegetable could be used in place of the zucchini. The cheese at the end really ties the whole dish together. Bites without the cheese could use a bit of salt. I also used ground turkey instead of ground beef, but I didn’t feel like I was missing anything.

Very good; there were no leftovers lol. Only thing I did differently was sub white rice and beef bouillon for the rice packet.

I increased the portions a bit to be able to feed my growing boys. I didn’t have the Knorr side dish, so I used 2 cups o instant rice and added beef bouillon to the two cups of (boiling) water. The whole family loved the taste…of course my kids complained about zucchini being in it, but they ate it any way.

I made significant changes to this recipe, so please note the changes. I used 1 medium yellow onion cooked with the beef instead of dried. I diced the zucchini small and added it to the beef when the beef was still a little pink. I didn’t have the specialty rice on hand, so I used 1 C rice + a beef bouillon cube in its place. I also used 1 C of canned diced tomatoes instead of fresh. I let it simmer it for 10 minutes, not 7. My family loved it and gobbled it up.

This was a super easy, busy weekday meal. Instead of the Knorr Rice Sides (because I didn’t have it), I used 3/4 cup white rice & cooked it in beef broth instead of water. I will definitely be saving this one!

I made this recipe with 2 pounds of ground beef, 1 zucchini, 3/4 can diced petite tomatoes, 1/4 dice onion, and 5.5oz jasmine rice because that is all I had, but the recipe came out good. I followed the directions from this recipe just using my ingredients. It was very easy, but NY rice did take 15-20 minutes instead of 7.
