One of the dishes that my friends and family ask for the most from me is this cheesy soup. This fantastic chowder is the best way to warm you up. Amazingly well done.

Yield: 6 servings

Ingredients

  1. ½ pound ground beef
  2. ½ pound ground sausage
  3. ½ cup diced onion
  4. 6 cups chicken broth
  5. 2 cups cubed potatoes
  6. 1 ½ cups finely chopped carrots
  7. 2 cloves garlic, minced
  8. 1 teaspoon dried parsley
  9. 1 teaspoon dried basil
  10. salt and ground black pepper to taste
  11. 1 ½ cups milk
  12. 2 tablespoons all-purpose flour
  13. ½ cup sour cream
  14. 2 cups cubed processed cheese food
  15. 1 cup diced tomatoes

Instructions

  1. Combine beef, sausage, and onion in a large skillet over medium heat; cook and stir until browned, about 5 minutes. Drain off grease and transfer to a large pot.
  2. Stir broth, potatoes, carrots, garlic, parsley, basil, salt, and black pepper into the beef mixture. Simmer over low heat, covered, until potatoes are tender, about 15 minutes.
  3. Mix milk and flour together in a small bowl. Pour into the pot. Bring back up to a simmer until chowder flavors combine, about 5 minutes. Remove from heat.
  4. Stir processed cheese and sour cream into chowder when it is no longer boiling, to prevent curdling. Ladle into serving bowls and top each serving with some diced tomatoes.

The whole family enjoyed this and had seconds.

Soooo good! I didn’t use sausage, just ground beef. Added chopped bacon, left out tomatoes and carrots. I also throw in some shredded cheddar

Good flavor but more of a soup

I made this with all ground beef, mini medley potatoes, shredded cheddar cheese and skipped the carrots. It was amazing,so hearty and flavorful. The family loved it! Next time, I want to add bacon.

Soup is very good!! Used all sausage, since I had some to use up. Makes a very filling meal.

Soooo good! Freezes well too. I skipped the sour cream because I didn’t have any, and I didn’t notice it for tomatoes so I botched that. It was similar to a broccoli and cheese soup.

Great recipe, switched potatoes to radishes, didn’t use flour.

I have made this soup twice following the recipe exactly and it is one of my family’s favorite. Great flavor and very hearty.

Made as written and used Rotel for the diced tomatoes. This turned out great for me on the first day I made it. Unfortunately the cheese didn’t melt very good with the leftovers. Not sure what happened? Flavor was still good but I had tiny balls of cheese throughout the soup with the leftovers that refused to melt. Taste will still good just a little odd to look at. Overall I enjoyed this and I will make it again.
