Ingredients

  1. 2 tablespoons unsalted butter, melted
  2. 4 cups shredded rotisserie chicken
  3. 1 (15 ounce) package frozen mixed vegetables
  4. 1 teaspoon chopped fresh thyme, plus more for garnish
  5. 3/4 teaspoon freshly ground black pepper
  6. 1/4 teaspoon kosher salt, or to taste
  7. 1 (10.5oz) can condensed cream of chicken soup
  8. 1 ½ cups chicken broth
  9. ½ cup heavy whipping cream
  10. 1 package cheddar biscuit mix (such as Red Lobster Cheddar Bay Biscuit Mix)

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Coat the bottom of a 13×9-inch baking dish with melted butter.
  2. Place shredded chicken and vegetables into the dish; season with thyme, pepper, and salt. Pour over condensed soup, broth, and cream; stir until well combined.
  3. Prepare biscuit mix according to package instructions.
  4. Drop 8 (about 1/4 cup) biscuit dough portions onto chicken and vegetable mixture.
  5. Bake in the preheated oven, uncovered, until biscuits are golden brown on top and casserole is bubbling around the edges, about 40 minutes. Sprinkle with thyme.
  6. This recipe was recently tested in our test kitchen and adjusted from one complete mixture to layering biscuit dough portions on top of the creamy chicken and vegetables for better results.

I doubled the recipe and used a foil baking pan. It turned out great although i needed about an hour to cook at 350.

This is so good the red lobster mix is a little over 11 ounces.I’ve used the pillsbury garlic cheddar biscuit mix but it is 7 ounces so you need 1.5 packs it’s cheaper though. one red lobster box is around $2.50 the gluten-free is $4.50 and one pillsbury mix is $1

Really great. A little runny. Next time I will reduce whipping cream to 1/3 cup and mix with the soup and broth (reduce to 1 1/4 cup) to thicken before I add to pan.

The casserole turned out to be a homemade pot pie. I used rotisserie chicken, can of peas, some shredded cheese, cream of chicken, chicken broth, garlic powder, pepper, and 1 box of Red Lobster’s cheddar biscuits. Was yummy!

I followed the recipe, but the chicken mixture was too runny and the biscuits were soggy on the bottom. Less bone broth next time. I’ll cut it by 1/2 cup. Cook time was 1 hour.

Fantastic recipe. Thank you for sharing. I made according to recipe with a very minor change. I added more cheese on top of chicken soup mixture, then put cheddar biscuits on top. My 2 skinless and boneless chicken breasts was seasoned with Cajun seasoning and cooked in airfryer and then chopped. Everyone went back for more! It does come out a tad soupy, but that is why the biscuits are there, to sop it up!

This turned out good for me, biscuits were perfectly browned and flakey, and good flavor. Based on other reviews and pantry limitations I did make some minor modifications. I heated glass 9×13 Pyrex in oven, added butter, when melted added 1/4 c. each very finely minced onion and celery and 1 clove garlic, and about 1/2 tsp each dried rosemary, thyme and fresh ground black pepper. back in the oven until nearly softened. (I did not add any salt) Removed from oven, added 1 can cream of chicken soup and 1 1/2 c. chicken broth, mixed well. (no heavy cream so skipped that). Sprinkled on a layer of drained and rinsed Costco can chicken, about 1.5 cans. (roasted chicken would definitely be better but not up to that task today). Added a layer of frozen carrots/peas on top, about 1.5 cups. Made the Cheddar Bay biscuit mix, I had 1/4 cup grated cheese left over so I sprinkled that on top before adding biscuits. I dropped 1.5-2 tbsp globs of biscuit mix evenly spaced, 3 x 6 on top. Baked 35-40 minutes . I tossed out the “season mix” from the biscuit mix after reading the ingredients. Next time I will double everything but the biscuits.

Followed the recipe as written. Top was firm. Underneath the biscuits were soggy. I baked it for an hour+. Came out dry and mushie. Don’t think I will make again. Really wanted this to be a winner. Disappointed.

Loved it with a few modifications. 2 TLB butter at the bottom melted layered rotisserie chicken frozen organic mixed veggies (I cooked them slightly because I wanted to bake for less time) 1 cup chicken stock (low sodium) poured over veggies and chicken 1 can low fat cream of chicken soup poured over it I sprinkled onion powder and garlic powder over the top and I think that helped with flavoring I wisked 1.5 cup biscuit mix with 1.5 cup low fat milk and 1 cup graded cheddar cheese until smooth. poured it over the top and didn’t mix it in! Baked at 375 for 30 minute until the top was golden (convection oven) (I tested the biscuits to make sure they were cooked through and I may have added a little time). It was bubbling when it came out.

So I noticed most people had issues with the vegetables on top drying out or burning. I thought this recipe might work with a little tweeking. I feel I was right. I put the chicken on the bottom followed by a layer of vegtables. I used spinach. Then the biscuit mix. Then the chicken broth mixture. I thought it looked kind of funny on top but I thought what the heck. I was not disappointed. It came out perfect. Try it it’s worth it.

The recipe itself was good. However, the biscuit crust never browned. I kept adding more oven times, even tried broiling it. The recipe inside was bubbling, but the crust was anemic in color.

Yum! Easy version of chicken pot pie but better. Seasoned chicken and thawed veggies on bottom, I don’t think butter is actually needed it’s just extra tasty fat. Then biscuit dough, then the liquid (I subbed sour cream for the heavy cream). Browned up and all cooked great family loved.

Made this dish according to the recipe. Very tasty, but the texture of the “biscuit” layer was more like dumplings than biscuits. I may try this again, but will consider using less liquid for the biscuit layer.

Didn’t make this exactly to the recipe since the reviews that said to layer the biscuit batter on top made so much sense. So that’s what I did and even though I was VERY skeptical putting this together it came out perfect. We loved this recipe and it will be a keeper. Another change I made was the choice in veggies since bagged veggies are not our preference. Used sliced mushrooms, diced celery, and chopped scallions instead. Also, if you make this try a handful of shredded cheddar and some chopped sage since these changes goes so well with the flavors of the Red Lobster cheddar biscuits. Yum!

This was a delicious dish, but having made it once, I think I can make it better the next time. I think previous reviewers have some good points. First off, I screwed up and introduced an extra 1C of liquid in the initial assembly of ingredients. It didn’t seem to make a difference because at the end of the cook, the consistency was perfect. I don’t know if I got lucky, but I would probably repeat the extra 1C because it came out wonderful. A previous reviewer suggested adding the 1/2C cheddar cheese called for by the boxed biscuit recipe. I followed that advice and it made a BIG difference in the flavor and consistency. Following the recipe in how it layered the ingredients and baked for one hour, I felt the biscuit dough wasn’t cooked enough. It was fine, but I felt it could have been better. Next time, I would probably bake for 70-75 minutes instead of 60. The biscuit dough was still very good, but it seemed to have potential for something even better. A previous reviewer also suggested layering the chicken, the vegetables and THEN the biscuit mixture. I agree that that would have allowed the biscuit mixture to develop in a better way. Bottom line is that this was delicious and satisfying. But with a couple tweaks, I think it will be even better next time.

I changed it a little .. I put the chicken, then the vegetables and then the biscuit mix .. I would do less of the chicken broth whipping cream mix .. the bread part cooked halfway but it was good !
