Ingredients

  1. 2 1/2 cups all-purpose flour
  2. 1/4 cup sugar
  3. 1 tablespoon baking powder
  4. 1 teaspoon kosher salt
  5. 6 tablespoons unsalted cold butter, cubed
  6. 1 cup shredded sharp Cheddar cheese
  7. 6 pieces smoked bacon, cooked and chopped
  8. 1 cup buttermilk
  9. 1 large egg, beaten

Instructions

  1. Preheat the oven to 450 degrees F.
  2. Line a baking sheet with parchment paper or lightly coat with vegetable oil.
  3. Whisk together the flour, sugar, baking powder, and salt in a large bowl. Cut in the butter with a pastry blender, or use 2 knives, until the butter is the size of peas; stir in the cheese and bacon.
  4. Combine the buttermilk and egg in a small bowl. Add to the flour mixture just until incorporated. Turn the dough out onto a lightly floured surface, and pat or roll the dough to 3/4-inch thickness; cut with a 3-inch round cutter, and place on the prepared baking sheet.
  5. Bake for 12 to 14 minutes or until golden brown.

These are a snap to make. And, very good, too. Great texture. Beautiful rise. My husband just ate three of them, right out of the oven!
