Yield: 4 servings

Ingredients

  1. 1 tablespoon dried Italian seasoning
  2. 1/2 teaspoon granulated garlic
  3. 1 teaspoon kosher salt
  4. 1 teaspoon freshly ground black pepper
  5. One 16-ounce log uncut fresh mozzarella
  6. 2 tablespoons store-bought balsamic glaze
  7. 1 tablespoon extra-virgin olive oil, plus more for oiling grill grates
  8. 2 heirloom tomatoes, sliced 1/2-inch-thick
  9. 12 fresh basil leaves
  10. Sea salt, for sprinkling

Instructions

  1. Preheat the grill to high.
  2. Combine the dried Italian seasoning, granulated garlic, salt and pepper on a plate. Brush the entire log of mozzarella with about a tablespoon of balsamic glaze, then roll in the dry spices. Place the cheese in the freezer to set up, 20 to 30 minutes.
  3. Oil the grill grates, then place the log of mozzarella on the grill to char quickly, about 2 minutes. Roll a quarter-turn and repeat until all sides are charred but not gooey, 2 minutes per side. Let it cool for a minute, then slice into 1/2-inch slices.
  4. Arrange the sliced tomatoes on a platter. Top the tomatoes with the sliced charred mozzarella, torn fresh basil, a drizzle of balsamic glaze, a sprinkle of sea salt and a drizzle of olive oil.

The cheese was delicious! The only issue I had was not getting the char marks on the cheese, but it was so good I didn’t care.

Most delicious caprese I’ve ever eaten. Who would have thought to grill the mozzarella!

This was a dud – 2 mins is way too long before it starts sticking and flavor wise it didn’t add much. Not worth the time and effort. Used smoked mozz if you’re looking for that kind of depth.

Looks Great, but i would have done a quick grill on the tomatoes….

My husband doesn’t like tomatoes and he said I can make this for him anytime. It was so delicious!
