These cookies are perfect for those who enjoy chai tea! The term “chai” or “masala chai” refers to a spiced black tea that is widely consumed throughout Southwest Asia and some regions of Africa. Cut the bags open and use the mixture inside for this recipe; any packaged spiced black tea would be wonderful. Cookies should be kept refrigerated and in an airtight container.

Ingredients

  1. 1 cup all-purpose flour
  2. ¼ cup white sugar
  3. ¼ cup powdered sugar
  4. 1 tablespoon chai tea mix
  5. ¼ teaspoon salt
  6. ¼ teaspoon ground cinnamon (Optional)
  7. ¼ teaspoon ground ginger (Optional)
  8. ¼ teaspoon ground cardamom (Optional)
  9. ¼ teaspoon ground allspice (Optional)
  10. ¼ teaspoon ground cloves (Optional)
  11. ½ cup unsalted butter
  12. ½ teaspoon vanilla extract

Instructions

  1. Combine flour, white sugar, powdered sugar, tea mix, and salt in a food processor or small chopper. Pulse until tea is pulverized and distributed throughout the dry ingredients. Mix in cinnamon, ginger, cardamom, allspice, and cloves. Add butter and vanilla extract. Pulse together just until a rough dough is formed.
  2. Scrape out dough onto a piece of wax or parchment paper. Form dough into an 8-inch log. Cover with paper and roll the log until smooth. Chill for at least 30 minutes.
  3. Preheat the oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper or silicone baking mat.
  4. Use a sharp knife to slice the chilled log of dough into 1/3-inch-thick pieces. Place on the baking sheets.
  5. Bake in the preheated oven until edges are just beginning to brown, 10 to 12 minutes. Let cool on the baking sheets for 5 minutes. Transfer to wire racks to cool completely.
  6. The spices will give a more pronounced chai spice flavor to the cookies.
  7. You can also freeze this dough.

I just took these out of the oven. They are totally delicious. I added the optional spices. Very easy to make in the food processor. Mine baked in 9 1/2 minutes.

I normally don’t like Chai Tea, but this recipe has changed my mind. I didn’t add the optional spices and the tea I got was vanilla chai, so I didn’t add the vanilla. Everything else was as the recipe stated. The cookies came out great! I would classify them as a spicy shortbread cookie. An enjoyable changed from a snickerdoodle. The cookies did get a little overdone on the edges, but it didn’t impact the flavor at all.
