Celery Salt

Utilize any leftover celery leaves to make your own celery salt! Drying them in the microwave keeps their fresh flavor and appearance. Additionally, you can pick your preferred salt and stay away from industrial additions. Keep in a shaker that is airtight. For best flavor, let sit for a week or two before using.

Ingredients

  1. ½ cup loosely-packed celery leaves, cut into 1-inch pieces
  2. ¼ cup kosher salt

Instructions

  1. Line a microwave-safe plate with a paper towel. Place celery leaves in a single layer on the paper towel; cover with a second paper towel. Microwave leaves, rearranging if needed, in 30-second intervals until dry and crispy. Uncover and cool, about 10 minutes.
  2. Measure out 2 tablespoons celery leaves and crumble with your fingers. Add to salt and mix well. Briefly pulse in a spice grinder if desired.
  3. Substitute sea salt for the kosher salt if desired.
  4. Do not microwave recycled paper towels, as they may catch on fire!
  5. The celery leaves may be dried until crisp in an oven set at the lowest possible temperature instead of in a microwave.

If you open this recipe in the app, you will not see the recommendation to avoid using recycled paper towel. It will catch on fire! PS – fresh lovage leaves can be substituted for the celery leaves. This herb is stronger tasting, so less may be needed.

The is a great way to make use of celery leaves. I did not dry them in the microwave. I washed them well, patted dry and placed on parchment paper on a sheet pan. Pre-heated the oven to 200, placed sheet pan in oven and after 10 minutes turned the oven off and left the light on. A couple of hours later they were thoroughly dry & crisp. Crunch them up on the parchment paper and then use the parchment as a funnel to transfer to the jar. This will make a nice addition to soups and stews. Thanks!
