Ingredients

  1. 8 ounces corvina fish, already cut into squares
  2. 1 Peruvian aji limo pepper, chopped
  3. Drop minced garlic
  4. Kosher salt and freshly ground black pepper
  5. 6 limes, juiced
  6. Dash freshly diced cilantro
  7. Hint rocoto pepper
  8. 1/2 red onion, sliced
  9. Steamed and peeled sweet potatoes
  10. Roasted corn
  11. Peruvian white corn

Instructions

  1. Mix the corvina, aji limo garlic, salt and pepper well. Then add the lime juice, cilantro and rocoto pepper. Put this combination on a plate and garnish with the slices of red onions. Accompany with the sweet potatoes, roasted corn and Peruvian white corn, if desired.
  2. Serve immediately!
