Ingredients

  1. 8 ounces cream cheese, at room temperature
  2. 1/2 cup sour cream
  3. 2 teaspoons freshly squeezed lemon juice
  4. 2 tablespoons freshly minced dill, plus sprigs for garnish
  5. 1 scallion, minced (white and green parts)
  6. 1 tablespoon milk, half-and-half, or cream
  7. 1/4 teaspoon kosher salt
  8. Freshly ground black pepper
  9. 100 grams good salmon roe

Instructions

  1. In the bowl of an electric mixer fitted with a paddle attachment, cream the cream cheese until smooth. With the mixer on medium speed, add the sour cream, lemon juice, dill, scallion, milk, salt, and pepper. With a rubber spatula, fold in 3/4 of the salmon roe. Spoon the dip into a bowl and garnish with the remaining salmon roe and sprigs of fresh dill.
  2. Serve with chips, toasts, or crackers.

 “Heaven , I’m in HEAVEN”.  I love you Ina. I love YOUUUUUUU .  ( and your sweety bear as well. )   I”ve been making this recipe for years. YEARS say I, but decided to try a wee bit of difference to MY recipe. Then INA G . ( sigh ) came up with this recipe. Mine was  made using   Caviar with Cream Cheese & scallions & dill.   Good. Very good . THEN I TRIED this!!!! Fantastic!   Brilliant!!  I put it on Crackers, toasty points , tortilla chips, bagels, in eggs, on eggs , scrambled WITH eggs. I tried it on CORN FLAKES BUT that didn’t really work , BUT I STILL ate it!   I”ll eat this without putting it on  ANYTHING . Just by the spoonful is my decadent pleasure . ( sigh )  Everybody loves this !  My “Cute EE Bear ”   well, his face lights up when he sees this dish. Very tasty. I used whipped cream cheese for convenience, added creamy goat cheese and a dash of hot sauce.

This is excellent.  I varied the recipe a bit.  I omitted the cream so that the finished product was thicker.  I served in as an appetizer in store bought mini-phyllo cups which I toasted in the oven for a couple minutes at 350 degrees just to crisp them up a bit.  Let them cool and then filled them.

This has become one of my signature dishes over the last several years. Not only do I serve it at my parties, friends request that I bring it to theirs as well. An excellent way to introduce anyone to caviar, as the rest of the ingredients really round out the fishiness. And most importantly– my children LOVE it!

This was wonderful. I made the spread and then served the salmon roe separately. I agree with the other reviewer, the best salmon roe makes a huge difference and is worth the expense. Served with some thinly sliced French bread that had been toasted in the oven with a little olive oil and this appetizer really shines.

Easy and excellent recipe. Make sure to get at least sushi grade caviar.
