Cauliflower Salad with Cheddar and Bacon

Every year at our family gathering, my aunt has brought this chilly dish, and there is never any leftover.

Ingredients

  1. 1 head cauliflower, cut into small florets
  2. 1 red onion, chopped
  3. 1 green bell pepper, chopped
  4. 8 ounces shredded Cheddar cheese
  5. 1 ½ cups cooked crumbled bacon
  6. 2 cups creamy salad dressing (such as Miracle Whip®)
  7. ½ cup white sugar

Instructions

  1. Toss cauliflower, onion, and green bell pepper together in a bowl; add Cheddar cheese and crumbled bacon. Stir salad dressing and sugar together in a separate bowl, pour into cauliflower mixture, and toss until well coated. Chill in the refrigerator until flavors blend, about 2 hours.

I made this yesterday and let it meld overnight. Yum! I “cut corners” or substituted with what I had on hand and it was still delicious! I used 2 (12-oz) bags of organic cauliflower florets (washed & trimmed), 1 organic yellow onion (chopped), 1 organic yellow bell pepper (washed & chopped), 8 oz. shredded cheddar cheese, 1 1//2 cups Hormel Real Crumbled Bacon, 2 cups mayonnaise, and a few drops of SweetLeaf liquid Stevia (vanilla creme). Even with my many alterations/substitutions this is a great and very forgiving recipe–THANK YOU! I’ll be making this many times this summer!

This was really, really good! Since my cauliflower was on the small side I eye-balled amounts of other ingredients. To make it keto I also used regular mayo and added artificial sweetener to taste. Also used a lot less onion. Still excellent.

My adult boys loved this! I did add some onions fried in almond flour/coconut flour/garlic powder/Parmesan cheese and bacon bits and popped it into the oven for a crispy topping!

I had frozen bell pepper strips so I just thawed those and chopped them into smaller pieces. I used mayo because I had it on hand and yellow onion as well. The bacon makes it great.

Really good!!! Perfect for a cookout. I used yellow onion as I didn’t have red one. I don’t like Miracle Whip so I substituted it for whipping cream.
