Ingredients
- 1 medium head cauliflower
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- Pinch of cayenne pepper
- 1 teaspoon olive oil
- 2 cloves garlic, minced
- 1 shallot, finely chopped
- 1/2 cup chopped scallions
- 1/2 cup finely chopped fresh cilantro
- Sea salt and freshly ground black pepper
- Juice of 1/2 lime
Instructions
- Make sure the cauliflower is completely dry, then chop into large pieces; you can include the core, but discard the leaves.
- Put the cauliflower pieces in a food processor with the cumin, paprika and cayenne; pulse everything together until it is the texture of rice. Work in batches if necessary and don’t over process or it will get mushy.
- In a large skillet, heat the oil over medium heat. Add the garlic and shallot and cook until softened, 2 to 3 minutes. Add the cauliflower mixture and cook until heated through, 3 to 5 minutes. Transfer to a serving dish and toss in the scallions and cilantro. Season with salt and pepper and add a squeeze of lime juice to help remove any bitterness from the cauliflower. Serve warm.

This was exceptional! So flavorful and addicting!!! Love love this
I have this rice at least once a week and pair it with sautéed zucchini, tomatoes and mushrooms:)
Delicious. Even added a couple florets of broccoli since I didn’t have enough cauliflower. Excellent
I was not a fan of the seasoning combination used. Mine turned out bitter. I’m not sure what I did wrong. Overall, it is well seasoned and full of flavor, but I personally was not a fan of the flavor. I would recommend for others to try this recipe for themselves. I hope others have better luck than I did.
I love Miss Brown’s recipes, and this rice has confirmed her deliciousness.
My first cauliflower rice attempt &so easy and delicious!!!
I have tried many cauliflower fried rice recipes before but this is the best one by far!! I added shrimp and tofu to mine to make it a main meal. Delicious!
After watching Ms. Brown make it on her show I decided to try it and I’m so proud of myself. Another plant-based dish!!! Mine turned out amazing and my mother approved of it too! I taste everything but the cilantro and lime really does it. Thank you Ms. Brown!!!
Delicious
Easy, but I don’t know what I did wrong. All I taste is the bitterness of cauliflower. I feel it need something else just hitting it for a few minutes with the seasonings does it take any of that bitterness away.
