Cauliflower Hash Browns

juice made from watermelon and bananas that is served with vanilla yogurt. Using a blender and juicer, I prepare my frozen. You can also use sugar substitute.

Ingredients

  1. ½ head cauliflower, grated
  2. ½ cup shredded extra-sharp Cheddar cheese
  3. 1 large egg, beaten
  4. ¼ cup panko bread crumbs
  5. ⅛ cup chopped green onion
  6. ¾ teaspoon salt
  7. ¼ teaspoon ground black pepper
  8. ¼ teaspoon smoked paprika
  9. 1 tablespoon extra-virgin olive oil

Instructions

  1. Place grated cauliflower, Cheddar cheese, egg, panko, green onion, salt, pepper, and paprika in a large bowl. Mix until combined; mixture will be very crumbly.
  2. Heat olive oil in a large skillet over medium-high heat until hot. Scoop up some cauliflower mixture using an ice cream scoop; pat into a flat patty. Gently place patty in hot oil; reduce heat to medium. Repeat with remaining mixture. Cook until a golden brown crust forms, about 5 minutes per side. Remove to a platter and serve immediately.

My husband and I both rate this a 5. At first, I didn’t think the completed mixture was going to hold together enough to make patties. But the more I kneaded it, the more formable it became. We really liked the texture of the cauliflower and the seasonings. Though we used it as a side dish, it could possibly be used as a main dish if patties were either loaves or made larger and served with a salad.

Wished I liked it. Followed the recipe with the only changes adding another egg (as others suggested) to keep it together better and didn’t have green onion, so used yellow, which shouldn’t really make an overall difference. Not sure why, but the extra egg didn’t work and the flavor didn’t ring my bell.

I’ve made it twice. It was great but 2 eggs hold it together or else it is too loose to form patties.

This is just terrific — a new go to dish, great flavor, golden brown tastiness. I find the patties don’t stick together too well, and that it does not matter! More egg and cheese might help, though that starts to compromise healthfulness. Last time I just spread the mix across bottom of a large pan, turned it in parts as it browned, and it was great. Extra paprika does not hurt.

Used frozen cauliflower rice which made it super simple. It was delicious but it seemed more like cauliflower cakes not hashbrowns. It was as good as any potato cake. This is on our weekly breakfast menu.
