Ingredients

  1. 4 (4 ounce) fillets catfish
  2. 1 tablespoon lemon juice
  3. ½ teaspoon salt
  4. ¼ teaspoon black pepper
  5. ¼ cup freshly grated Parmesan cheese
  6. 2 tablespoons butter, softened
  7. 1 ½ tablespoons mayonnaise
  8. 4 roma tomatoes or sun-dried tomatoes, sliced thin

Instructions

  1. Preheat broiler to 500 degrees. Coat a broiling pan with nonstick cooking spray. Brush both sides of fillets with lemon juice, and then sprinkle with salt and pepper. Place fillets flat side up on prepared pan.
  2. In a small bowl, mix Parmesan cheese, butter, and mayonnaise.
  3. Broil fish about 4 inches from heat for 6 minutes. Remove pan from oven, and turn fillets over. Spread the cheese mixture evenly over each fillet. Top with tomato slices. Broil an additional 4 to 6 minutes, or until fish flakes easily with a fork.

OMG, this is an excellent dish for any occasion. I followed all directions except I added slices of onion and did not add mayo/Parmesan cheese mix until last couple minutes pouring it over the tomato/onion and it was delicious. TRY IT YOU’LL LOVE IT

I accidentally bought tilapia because it was as thick as the catfish and right next to it. Other than that, I followed the recipe exactly as written. The mayo and butter made it to greasy for me but I do have a sensitive stomach. My husband LOVED it with the mayo and butter. I wish I could do 3 1/2 stars because I was so torn. What made me go with 4 is the flavor was great. But I didn’t like that there wasn’t much crisp. Next time I will Pan fry it. I couldn’t cook it long enough to crisp it in the oven without overlooking the fish.

This is mine and my husbands favorite fish recipe. I make it once a week. I add 1/4 to each of garlic powder, oregano, rosemary, and marjoram to the cheese mixture. And I put some balsamic vinegar and basil on top of the tomato. It is super delicioud.

It turned out to be great! My husband loved it. I think i just need to go easy on the lemon. Also, broiling the fish for 6 minutes on each side is a little too much. i wasn’t able to turn it very easily. i think it should be 3 minutes the first time around and then 5 minutes the second time.

I like it. Sometimes simplicity is key. Less is best. and I let my fish cook a little longer than six minutes. Coated the pan with olive oil.

This is an excellent recipe. It’s simple, quick, and delicious. I used lemon pepper in place of the lemon juice and black pepper, and added the tomato towards the end (maybe 2 minutes of cooking time left) as some other reviewers suggested. Cooking time is relative — I usually broil it until the Parmesan is mostly browned and will pull it out if I notice anything starting to blacken. I’ve made this for family and friends and have gotten nothing but positive feedback and lots of requests for the recipe.

Just made this tonight, cooking the tomatoes alongside the fish (and with added fresh herbs (basil, oregano, thyme, rosemary) and dried Italian seasoning to the cheese mixture, this was GREAT!!! Definitely “company quality,” if you get my drift. Highly recommended. I just broiled the fish on one side, as instructed, then put on the coating (which is fabulous!), then pushed the fish aside for the herbed tomatoes. Grilled it all another 5-6 minutes, till the coating browned, and voila! Delicioso!

I prepared this on top of couscous and sautéed spinach and it was so good! Very easy. The only thing i did different was flip the fish, added lemon, garlic salt /w parsley, pepper and parmesan topping and broiled for a few minutes until topping browned before i added chopped roma tomatoes and then i broiled an addtl 6 min. I was using pretty large filets so the extra time was needed. I will definitely make this again.

This was very good, I followed others advice and put the tomatoes on the side. My husband couldn’t tell it was catfish, it was flavorful but not at all “fishy”

Really yummy. Only problem was using broiler pan. Wonderful topping ran off and ended up in bottom section. Next time ( and there will be a next time soon) I will line regular baking fish with foil so I can capture all the runoff.

Instant hit! I used red, orange, and yellow peppers to replace tomatoes. Tempted to try with Lebanese garlic paste in place of mayonnaise.
