Ingredients
- Two 10-ounce bags shredded carrots, available from the produce department
- 1 cup (3 handfuls) raisins
- 2 tablespoons poppy seeds (available in the spice aisle)
- 1 lemon, juiced
- 2 oranges, juiced
- 1/2 cup (2 handfuls) light brown sugar
- Salt
Instructions
- Combine all ingredients well, using your fingers to toss and coat the carrots thoroughly. Transfer to a travel container or serving dish. As the salad sits, the raisins will plump a bit and carrots will take on citrus taste.

This is good as it is, but it elevates to great with the addition of jicama! I started with a small amount, but now, I’m using equal parts carrot and jicama. I like to dice the jicama small to contrast with the shredded carrots.

Made this for a potluck and it was a hit. I used juice oranges, so had fair amount of juice. As 1 reviewer suggested, I used only 1 Tbsp. poppy seeds and it was perfect. This is a keeper!
In my opinion it tasted more like a poppy seed salad then a carrot one-2tablespoons is too much-I decided to make it again using 1/2 tbls
I like the classic carrot salad but found this to be a good alternative. Served it with an Indian dinner of marinated grilled chicken, lentil dal, Basmati rice, and tomato chutney. Wasn’t the star of the show but a great character actor. I did take an earlier suggestion and grated in some fresh ginger root.

Did you realize that some people just aren’t great cooks, or just learning, or conversely, a total klutz around sharp utensils [like my daughter who cannot grate or cut ANYthing without cutting herself severely]??? A refreshing new way for carrot raisin salad!! Some of the family is not too keen on mayo or salad dressing type dressings for this salad……but this is definitely a keeper for sure!!
