Carrot Bundt Cake with Cream Cheese Filling

This gorgeous Bundt cake has frosting inside and is filled inside. It is a perennial favorite at potlucks and carry-in dinners.

Ingredients

  1. 1 (8 ounce) package cream cheese, softened
  2. ¼ cup white sugar
  3. 1 large egg, beaten
  4. 2 cups all-purpose flour
  5. 1 ¾ cups white sugar
  6. 2 teaspoons baking soda
  7. 2 teaspoons ground cinnamon
  8. 1 teaspoon salt
  9. 1 cup vegetable oil
  10. 3 large eggs, beaten
  11. 3 cups shredded carrots

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt).
  2. Combine cream cheese, sugar, and egg in a bowl for filling, mixing until well blended. Set aside.
  3. Combine flour, sugar, baking soda, cinnamon, and salt for cake in a bowl. Add oil and eggs; mix until moistened. Fold in carrots. Reserve 2 cups of batter; pour remaining batter into the prepared pan. Pour cream cheese mixture over batter. Spoon reserved batter carefully over cream cheese mixture, spreading to cover.
  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 55 minutes. Cool for 10 minutes; remove from the pan. Sprinkle with powdered sugar.

Awesome recipe and easy to make. Made it for a friend’s surprise birthday party and it was the highlight of the party. Cake is moist and I like it that the cream cheese frosting is folded into the mixture, which adds a little surprise. Cake was finished before I had a chance to take picture…

This cake is sooo good! I have to admit in putting it together I thought it was going to be a dud. The batter was super thick! Almost like cookie dough. So I prepared for the worst. But to my surprise, it tastes phenomenal!! No frosting needed. I love it!! P. S. Wouldn’t allow me to add my picture of finished product.

No icing? This recipe didn’t need it! Cream cheese filling inside with powdered sugar on the top! Great for a pot luck and everyone raved about it!
