With the onset of cooler weather, my thoughts naturally turn to fall vegetables, with apples at the top of the list. These soft, mildly sweetened, moist muffins have a flavor that is a cross between apple cake, carrot cake, and spice cake. For a quick breakfast, these muffins freeze well and reheat quickly in the microwave at a low temperature.

Ingredients

  1. 1 ½ cups all-purpose flour
  2. ½ cup old-fashioned oats
  3. ¼ cup brown sugar
  4. 1 ½ teaspoons baking powder
  5. 1 ½ teaspoons ground cinnamon
  6. ½ teaspoon baking soda
  7. ¼ teaspoon salt
  8. ¼ teaspoon ground nutmeg
  9. 1 cup low-fat vanilla Greek yogurt
  10. ⅓ cup buttermilk
  11. ¼ cup vegetable oil
  12. 1 large egg, lightly beaten
  13. 1 teaspoon vanilla extract
  14. ¾ cup peeled and grated apple
  15. ¾ cup peeled and grated carrots
  16. ⅓ cup chopped walnuts, lightly toasted

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin or line cups with paper liners.
  2. Stir together flour, oats, brown sugar, baking powder, cinnamon, baking soda, salt, and nutmeg together in a large bowl. Whisk together yogurt, buttermilk, oil, egg, and vanilla extract in a second bowl. Fold flour mixture into yogurt mixture, mixing just until combined and flour disappears. Stir together apple, carrot, and walnuts in a separate bowl; gently fold into the batter. Divide batter evenly among the muffin cups.
  3. Bake muffins in the preheated oven until golden brown or a toothpick inserted in the center comes out clean, 17 to 19 minutes.
  4. Cool muffins in the tin for 5 minutes. Transfer to a wire rack to cool completely.
  5. If you’re using a soft, juicy apple, you may find shredding works better than grating.

For people who are looking for a muffin this is a great recipe. No, it’s not sweet and delicious like a cupcake, because it’s a muffin. A healthy, hearty breakfast muffin. I followed the recipe exactly the first time and it was good. The second time I didn’t have buttermilk or apples so I subbed apple sauce and raisins. My only critique of this recipe is that I do think it needs a tad more cinnamon and salt, but that is just my personal preference. For a breakfast on the go it’s perfect. Nice and moist too!

For those limiting sugar, this is a fine muffin recipe. All I needed was half a reasonably sized carrot.
