Caramelized Onion Dip

Ingredients

  1. 1 tablespoon vegetable oil
  2. 2 cups thinly sliced onion
  3. 2 teaspoons chopped fresh sage leaves
  4. 3/4 cup mayonnaise
  5. 3/4 cup sour cream
  6. 1 teaspoon salt
  7. 1 teaspoon ground black pepper
  8. Potato chips, for serving

Instructions

  1. Heat oil in heavy medium saucepan over medium-low heat. Add onions and sage. Cover and cook until onions are deep golden brown, stirring occasionally, about 20 minutes. Remove from heat and let cool.
  2. Whisk together mayonnaise and sour cream in a medium bowl to blend. Stir in the cooled caramelized onions, salt, and pepper. Cover dip and refrigerate until flavors blend, about 2 hours.

I would probably try more sour cream, rather than equal parts mayo and sour cream. This is more like a condiment, than a dip. I think I’ll use the rest for patty melts this weekend since there’s so much left.

I follow recipe’s pretty loosely. This is a great recipe. I added roasted garlic, worcestershire, sherry and celery salt. Big hit.

I made this dip for Easter and everyone loved it! It’s really easy and the only suggestion I had was to chop the onions instead of slice them as the recipe states. Then it is easier to scoop up with your potato chips! I also used sweet onions which gave it a great depth of flavor.
