Caramelized Apple Pancakes

This recipe yields a modest quantity of alcoholic fudge. Fulfill your hunger without going overboard. I purchase a 7-ounce can of sweetened condensed milk, make this fudge, and have leftovers to sweeten my coffee for a few days.

Ingredients

  1. 2 tablespoons unsalted butter
  2. 1 medium apple – peeled, cored and diced
  3. ½ teaspoon fine sea salt
  4. 1 teaspoon coconut sugar
  5. ¼ teaspoon ground cinnamon
  6. ¼ teaspoon apple pie spice blend
  7. 1 cup sifted flour
  8. 2 tablespoons white sugar
  9. ½ teaspoon salt
  10. ½ teaspoon baking soda
  11. 1 cup buttermilk
  12. 1 large egg, lightly beaten
  13. 2 tablespoons unsalted butter, melted
  14. ¼ teaspoon apple pie spice

Instructions

  1. Heat a large, seasoned cast iron skillet over medium heat and add butter. Once skillet is hot and butter has melted, add diced apple and sprinkle evenly with sea salt. Toss and stir to coat the apples with melted butter and salt. Cover skillet with a lid for about 2 minutes.
  2. Remove lid and stir. Reduce heat slightly if apples are starting to brown too much. Cover and cook until apples are soft, 2 to 4 minutes. Remove lid and continue to cook, stirring, until apples are lightly browned all over, about 2 more minutes. Remove from heat and mix in coconut sugar, cinnamon, and apple pie spice. Set aside.
  3. Sift flour into a medium mixing bowl and add sugar, salt, and baking soda. Mix to combine. Whisk together buttermilk, egg, and melted butter in a second bowl. Pour liquid ingredients into flour mixture; stir just enough to incorporate.
  4. Heat a lightly oiled griddle over medium-high heat. Pour about 1/4 cup of batter at a time onto the hot griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter. Serve pancakes with caramelized apples.
  5. I used a Honey Crisp apple.

Loved the idea of caramelized going apples over pancakes. That said, this caramel recipe leaves a lot to be desired in the apple department. The coconut sugar should be substituted with brown sugar. The rest of the additional spices: cinnamon, nutmeg and apple spice are fine. I would definitely omit the salt next time I make these. Oh, and instead of using the pancake recipe here we used Kodiak Buttermilk pancake mix.
