Caramel-Nut Truffles

Ingredients

  1. One 8.75-ounce can salted, roasted mixed nuts
  2. 1 tablespoon sugar
  3. 1/4 teaspoon cayenne
  4. Zest of 1 lemon
  5. 40 soft caramels

Instructions

  1. Chop the nuts fairly finely and mix with the sugar, cayenne and lemon zest.
  2. Roll a caramel in your hand until round, then roll in the nut mixture, pressing to coat. Set aside and repeat with the remaining caramels.

The recipe does call for soft caramels so I’m not sure why you would use Kraft. Used Werthers with no problems! Love caramels!!

After reading the reviews I took note. I used Werther’s Original “Soft Caramels”. It worked. I was able to roll the caramel in a quick ball and dropped into the nut mixture. The nuts took hold immediately. The Kraft candy is too hard!!

I made these to put into my cookie baskets at Christmas and thought they came out good.  I used the soft Werthers caramels as mentioned in an earlier post and was patient when pressing in the nut mixture.

Same issues as everyone else.. nuts would not stick.  Followed someone else’ s suggestion and dipped them in melted chocolate before rolling in the nuts.  That suggestion saved the day!

Had the same issue as others–nuts wouldn’t stick.  HOWEVER, I just rolled the caramels into a ball, pressed them with my thumb on one side so they were a “turtle shell”  and then “glued” a half pecan to the shell with a touch of melted chocolate bark. Worked great to save the recipe.

Really disappointing – don’t waste your time/money.  Nuts wouldn’t stick to caramel even when heated.  First bad recipe I’ve ever had from Ree.

the nuts would not stick to caramel, it looked so easy and fast. I cant even unwrap all the caramels in 30 min!

I don’t think REee used Kraft caramels for this recipe.  I found Kraft caramels too hard to roll as they come out of the bag.  I  also put them in the microwave to soften them up and the nuts did not stick well as mentioned in another post.  Thos caramels that you find wrapped in wax paper are much softer and would probably work a whole lot better.  I was dissapointed in the outcome and probably won’t make them again.

Kraft caramels rolled well for me. I crushed the nuts in a bag, drop in the caramel and use it to press into the nuts into the caramel.  I like the lemon zest.
