Ingredients

  1. 1 ¼ cups butter, softened
  2. 1 cup white sugar
  3. 1 cup brown sugar
  4. 2 large eggs
  5. ¼ cup strong brewed coffee, cooled
  6. 1 teaspoon vanilla extract
  7. 2 cups all-purpose flour
  8. 1 teaspoon baking soda
  9. ½ teaspoon salt
  10. 1 (11 ounce) package caramel bits
  11. 1 cup chilled mini marshmallows, cut in half

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line 2 to 3 baking sheets with parchment paper.
  2. Cream butter, white sugar, and brown sugar together in a large bowl with an electric mixer. Add eggs, cooled coffee, and vanilla extract.
  3. Whisk flour, baking soda, and salt together in a small bowl. Incorporate slowly into egg mixture. Fold in caramel bits and marshmallow pieces.
  4. Drop dough by heaping teaspoonfuls onto the prepared baking sheets.
  5. Bake in the preheated oven until golden brown, about 9 minutes.

I am a caramel lover, so for taste I rated this recipe at 5 stars. However, If possible to rate a recipe for more than one attribute, consistency would have been rated lower. When I removed the cookies from the oven, they looked like cookies. After cooling on the pans for 5 minutes or so, they melted right into very tasty, chewy pancakes. For that reason we ate them. I even added another half cup of flour to the batter that remained after baking two pans, but no luck. If you’re looking for a more conventional type of cookie, this one isn’t for you. I have to wonder if there isn’t a mistake in the flour measurement. I will try again and add at least another cup of flour. Another change I may try would be to dissolve instant coffee in a smaller amount of water, say 1/8 cup, to see if that helps.
