This smoky chipotle meatloaf is hot, sweet, and flavorful. You may easily customize it to suit your tastes. Any leftovers can be made into sandwiches!

Ingredients
- ¾ cup sugar
- 4 large eggs
- 1 ¾ cups water
- 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk
- ½ teaspoon vanilla extract
- ⅛ teaspoon salt
- 1 cup sugar
- ¼ cup water
- Ice
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Cook sugar in a heavy skillet over medium-low heat, stirring constantly, until melted and caramel-colored. Carefully pour into eight 6-ounce ungreased custard cups, tilting to coat the bottom completely.
- Beat eggs in a medium bowl; stir in water, sweetened condensed milk, vanilla, and salt. Pour into the prepared custard cups; set cups in a large shallow pan. Fill the pan with 1 inch of hot water.
- Bake in the preheated oven until a knife inserted near the center comes out clean, about 25 minutes. Move the cups from the pan to a wire rack; cool for 1 hour. Chill for several hours or overnight.
- Serve by loosening sides of flan with a small knife; invert onto rimmed serving plates. Top with sugar garnish, if desired, or garnish as desired.
- Make sugar garnish: Fill a medium metal bowl halfway with ice. Combine sugar with water in a medium saucepan; stir. Cover; bring to a boil. Cook over high heat until light brown, 5 to 6 minutes. Immediately put the pan on ice for 1 minute. Carefully drizzle sugar decoratively over a foil-lined cookie sheet. Let cool, then peel from foil and use as garnish.

You have to move fast when pouring the caramelized sugar into the custard cups. It takes about an hour at 350 to set up properly. This was delicious!

I made this before from the recipe on the Eagle can and baking time is at least 55 minutes, not the 25 minutes in the recipe.
This is great. No needed evaporated milk or other ingredients. Smooth and dense and delicious.
Cook time begins at 60 min….then test. Yummy.

Did not set in 25 minutes…. you will need a good hour at 350 degrees… delicious when finally done tho!
Came out very well despite my tweaks. I only had 3 eggs so cut back the condensed milk and water. Also didn’t have custard cups to,used oven safe cereal bowls. I ended cooking the flans for about 60 min. because of their size and topped with a sugar coated sliced whole strawberry. Beautiful. Was so proud to show them off and try I forgot to take photo before they were eaten.

Comes out perfect every time but I found that if you use a pan that can allow you to fill it with water just below the top of your cups the surface will come out better and very smooth but it does seem to cripple the cook time. 🙂
