Ingredients
- 20 bocconcini (mozzarella balls)
- 1 cup extra-virgin olive oil
- 1 teaspoon red pepper flakes
- Kosher salt and freshly ground black pepper
- One 15-ounce jar plum preserves
- 1 cup balsamic vinegar
- 20 fresh rosemary sprigs
- 2 pints grape tomatoes
Instructions
- Put the bocconcini in a large bowl with the olive oil, red pepper flakes and some salt and pepper. Cover with plastic wrap and marinate in the refrigerator for at least 1 hour.
- In a food processor or blender, puree the plums with the balsamic vinegar until smooth. Pour the mixture into a medium pot and bring to a boil over medium-high heat. Turn the heat down to simmer and cook until the mixture has reduced by about half, several minutes. It should be fairly thick, but remember, it will continue to thicken as it cools. When cool, pour it into a squeeze bottle and refrigerate.
- Trim about 2 inches of the leaves off the bottoms of the rosemary sprigs. Skewer a tomato followed by a bocconcino onto each. Arrange on a platter, cover and refrigerate until ready to serve. Just before serving, squeeze over the plum balsamic drizzle.

I have made this recipe for elegant gatherings as well as casual and they are always a favorite. I also couldn’t find plum preserves, so I used grape as a substitute – works great.
Haven’t made this recipe yet. Just wondering what brand of plum preserves she used & where to find them? Please add a link up by the plum preserves in the recipe, if you can. But at least reply to this comment the kind used.
Could not find plum preserves, so I used fig preserves, which are in the same family. Excellent!! A big hit with everyone.

I am saddened to hear anyone criticize anyone’s accent or pronunciation. Caprese salad is a favorite in our house and this is such an elegant way to serve as an appetizer.
I haven’t made this recipes yet, but I plan to. I just want to note that I found the comment about Ree’s accent appalling. My mama always told me if you can’t say something nice don’t say anything at all.
So easy and so delicious! Fun and pretty way to make a Caprese salad. The glaze was fabulous. Will make again!
This was almost a Pinterest fail! I used A jar of Bon Mame plum preserve and balsamic. Reduced it by half and it ended up like tar! Used balsamic glaze from the store to save the day!
Please please please someone on the network teach “the pioneer woman” how to pronounce BALSAMIC??!?!?!?!? Her pronunciation of so many words is HORRIFIC.
These were a huge hit for Easter appetizer. I cut grape tomatoes in half and just reduced balsamic without plum preserves and put basil leaves in between. Really good and fresh.
