Caprese Salad with Burrata

During the spring and summer, a simple and delectable Caprese salad is a must-have, especially if you have fresh Burrata mozzarella and vine-ripe tomatoes.

Ingredients

  1. 4 medium vine-ripened tomatoes
  2. 16 ounces Burrata cheese
  3. 1 bunch basil, leaves picked from stems
  4. ½ cup extra-virgin olive oil
  5. coarse salt and freshly ground black pepper to taste
  6. 2 tablespoons balsamic glaze, or to taste

Instructions

  1. Slice each tomato into 3 or 4 thick slices. Place on a serving tray or platter.
  2. Pull Burrata cheese apart into pieces and place on top of tomatoes. Add basil leaves, then drizzle with olive oil. Season generously with salt and pepper and drizzle with balsamic glaze.
  3. You can use Buffalo mozzarella in place of Burrata.
