Our family enjoys this jalapeno-strawberry jam around Christmas time. Although it isn’t particularly hot, you may make it so by adding additional jalapenos or even a few habaneros. This jam has a beautiful depth of flavor from the sweet strawberry taste mixed with the jalapeo flavor.

Ingredients

  1. ½ pound sliced bacon
  2. 4 cups potatoes, peeled and cubed
  3. ½ onion, chopped (Optional)
  4. 6 eggs, beaten
  5. 1 cup shredded Cheddar cheese

Instructions

  1. Cook bacon to desired doneness in a cast iron skillet over the slow burning coals of a campfire. Remove bacon from the skillet and set aside. Stir the potatoes and onion into the hot bacon fat. Cover, and cook until the potatoes are soft, about 10 to 12 minutes.
  2. Crumble the bacon into the potatoes. Stir in the eggs, cover, and cook until set through, about 2 minutes. Sprinkle with the cheese, and allow to melt before serving.

I made this at home for my husband, it made 3 servings. I used yukon gold potatoes (recommended, yum) and topped it with green onion, sour cream, and leftover taqueria salsa. I spiced it with chili powder, onion powder, garlic powder, garlic salt, and oregano, (by eye really.) I cooked the potato and onion for about 9 minutes and it really stuck to the bottom, I adjusted the heat from medium gas flame to as far as “simmer.” Tasty for a breakfast dinner! I’d do guacamole and pico de gallo toppers next time. 🙂

I’ve been making this for pretty close to thirty years. Usually at home, rather than camping, though. I generally use a large non stick covered pan, as this recipe can stick very badly. Rather than cooking the bacon whole and then crumbling it, I’ve found it easier to just slice the whole pound of bacon (easier done when well chilled) and separate it while cooking it with the onion. Also, frozen hash browns work very well. I generally make a large batch, as this reheats beautifully in the microwave. For many, this recipe will require salt and plenty of pepper, but I generally cook it without and let people add their own.

Made it on the gas range at home. Since I used turkey bacon, I added olive oil prior to adding the potatoes. Also added minced garlic. Good stuff.

To avoid eggs sticking to cast iron, beat eggs with a teaspoon of water per egg before adding to skillet mixture.

Love this recipe I make it at home for a quick breakfast. For flavor I add salt,pepper and garlic salt in the potatoes while cooking. This recipe makes for great burritos, before I wrap I sprinkle with the cheese. Delicious!!!

I added 1 lb ground sausage and a bell pepper and onion. Cooked in my iron skillet on my burner on outdoor grill. Makes it 288 calories but worth every on. My family all loved it. Will definitely do again. Low flame & stir often – or tends to stick.

It turned out great! My kids loved it. I followed the recipe almost as is except, I had bell peppers so I added them along with the onions about 4 minutes before adding the eggs. To make it pretty and add a bit more flavor I threw some chopped chives on top.

We have this every year at Christmas time at work, our production manager makes them for the entire factory. He puts them in big cooler and serves them with ladle. He calls them Cooler Eggs. lol! It is a big hit and so easy!

Recipe works great on the stove too! We used diced ham (didn’t have bacon) so we had to use some coconut oil for frying the potatoes, and we cooked our potatoes a little longer because we like them softer. Delicious!

Skillet breakfasts are a must when camping! This is simple, yet delicious. Who doesn’t love bacon and potatoes? For appearances only, I cooked my eggs separate before tossing them into the skillet with the bacon and potatoes because I didn’t want it to look like slop for my food pic! Ha! I know, I know….yes, I’m one of those campers who have to do their hair every morning as well. 😉

I am a Venture Scout advisor and this is a hit with the crew. We have made it with canned, cubed potatoes as well. It cuts down on the cooking time since they are precooked. We also add some orange, red or yellow peppers. We have not had any issues with sticking to the dutch oven or cast iron skillet. My gang gave it a 5 star rating!!

This is a frittata. If you approach it that way, you can add all sorts of leftovers in your fridge and it will always turn out well. I went Mexican and added chopped jalapenos and finished it off with cilantro and salsa. Next time I might try chopped spinach and sliced mushrooms. Play around with this recipe and make it your own.

A great camping dish – we plan this so that when we bake potatos for dinner, we make a few extra – and then throw the cooked, chopped up potatos in the pan after the bacon. They brown up nicely in the bacon fat, and dont take so long as they are already cooked. Wipe out some of the fat before adding the eggs – maybe add a little butter so the eggs dont stick. Bacon fat tends to be real greasy – Awesome treat. Gave it 4 stars cuz surely it cant be very good for us…but tastes good!
