One of my favorite starter drinks has always been Campari & Soda with a slice of orange. It’s easy to drink, good for your stomach and has low alcohol content, if you just want an easy night! In the past decade, Aperol Spritz has become all the rage, and although I find them tasty, they are a bit too sweet for me. The beauty of this cocktail is that it is half Campari and half Aperol. It is less sweet and more my style. Any other herbal liquor would also work great here.

Ingredients
- 2 ounces Campari
- 2 ounces Aperol
- 2 cups prosecco
- Club soda, orange slices and thick grapefruit peels, to serve
Instructions
- To four wine glasses filled with ice, add equal parts Campari and Aperol. Evenly add the prosecco and top with club soda. Garnish each cocktail with an orange slice and a grapefruit peel. Enjoy!

I absolutely loved this drink — more so than an aperol spritz. I agree with Lizzie that aperol by itself can be a bit sweet. I really like Campari, so the two together was perfection!! I also top my spritz’s with a splash of club soda. I used just orange as I didn’t have grapefruit. Cheers!
I did not make this recipe but ordered it at brunch (instructions needed!) and declared it the brunch drink of the summer. A MOST refreshing improvement on an Aperol spritz!
