Calabrian Cracked Olives

Ingredients

  1. 2 pounds green Sicilian olives
  2. 1 cup olive oil
  3. 1/2 cup sweet California chili powder
  4. 1/4 cup chopped parsley leaves
  5. 2 tablespoons minced garlic
  6. Splash sherry vinegar

Instructions

  1. Place Sicilian green olives in a resealable plastic bag, hit with mallet or hammer to crack the olives. Add olive oil, chili powder, parsley, garlic and vinegar. Mix well and serve.

I hope your readers know that you do not mean fresh green olives for this recipe.  If they they don’t, they will end up with a mouth full of bitter.

“Place Sicilian green olives in a resealable plastic bag, hit with mallet or hammer to crack the olives”? Well once you do that, a plastic bag is toast for keeping a cup of olive oil in . . . yikes!

Bravo Michael, you have just taken me back to Europe. Both of my parents were born in Spain and I do remember as a child all the Italian friends they had. Between Spain and Italy, and of course France, since my father’s mother is from there, I had the opportunity to try the best food in the whole world. These olives taste like heaven. I served them while entertaining very important people, and everybody was totally impressed.

Best olives ever! Made half of the recipe for six people and the olives lasted 10 minutes. The other appetizers went mostly untouched
