A cake that happens to be a quesadilla? It’s amazing! Layer tortillas with cheese and your favorite taco fillings, like beef or beans. Bake in a springform pan, and suddenly you have a quesadilla to serve to a crowd.

Ingredients
- 2 tablespoons olive oil, plus additional for greasing
- 1 small red onion, diced
- 2 cloves garlic, minced
- 1 pound 85% lean ground beef
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- Kosher salt and freshly ground black pepper
- 1 1/2 cups shredded Cheddar from the block
- 1 cup shredded pepper jack cheese from the block
- Seven 8-inch flour tortillas
- Fresh cilantro, for serving
- Sour cream, for serving
- Pico de gallo, for serving
Instructions
- Preheat the oven to 400 degrees F. Grease an 8-inch springform pan with olive oil. Set aside.
- In a large skillet, add the olive oil and place over medium-high heat. Add the onion and cook until softened, adding the garlic during the last minute, 4 to 5 minutes. Add the beef and cook until just browned, about 5 minutes. Sprinkle over the chili powder and cumin, then season with salt and pepper and cook another minute or so. Set aside and allow to cool.
- Combine the two cheeses in a medium bowl.
- Place a tortilla in the bottom of the greased springform pan. Top with a thin layer of the beef as well as some cheese. Repeat this six more times, reserving 1/2 cup cheese for finishing.
- Bake for 15 minutes, shielding with foil as needed if the top gets too dark. Add the reserved 1/2 cup cheese to the top and bake until cooked through, another 5 minutes.
- Remove from the oven and allow to set for 10 to 15 minutes before removing the side of the pan, slicing and serving.
- Garnish with cilantro, sour cream and pico de gallo.

Great recipe, I did make a few changes to fit our likes. Used ground chicken, and refried beans and alternated the layers with a hot pepper cheese on the beans and cheddar on the chicken! Topped with sour cream, hot sauce. A big hit in the house and will use this recipe a lot.
