Ingredients

  1. 1 teaspoon paprika
  2. ½ teaspoon ground cumin
  3. ½ teaspoon ground black pepper
  4. ½ teaspoon cayenne pepper
  5. ½ teaspoon rubbed dried sage leaves
  6. ½ teaspoon garlic salt
  7. 1 ½ teaspoons extra-virgin olive oil
  8. 4 center cut pork chops

Instructions

  1. Mix paprika, cumin, black pepper, cayenne pepper, sage, and garlic salt on a plate. Liberally coat each pork chop with the spice mixture.
  2. Heat olive oil and several pumps of non-stick, butter-flavored spray in a large skillet over high heat. Place pork chops in the skillet, reducing heat to medium. Cook until the pork is no longer pink in the center, 8 to 10 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

This is new for me delicious way to make pork chop. While not my favorite it was very good. I didn’t have any sage so I left it out. Otherwize I made the dish as directed. The pork chops turned out rather spicy, which is fine with me. But, if you don’t like that you should dial back on the spices.

I added some garlic powder and bread crumbs to the parm. I also used the thick cut, almost an inch, and thought the chops were a little dry. They also needed about 5-7 more minutes since they were faintly pink in the center. Seasonings were OK and added some ground pepper on the top.

As a review suggested, I used garlic powder instead of garlic salt. I did not have any dry white wine, so per a google search I used white wine vinegar instead. This is what hurt it for me, I didn’t like the vinegar taste. I also didn’t like the tarragon. I might try again but change things up a little.

Real easy — next time, I might try cutting the chops into chunks and tossing the spices into a plastic bag to coat them. Might also make a nice rub for steak.

Really good – I went light on the red pepper and took the suggestion to cube and shake in a bag, then brown in olive oil. I will definitely do this again!
