These cookies, which my mother used to prepare, are my all-time favorites. She typically covered them in white frosting. They were for my kids, but they rarely stayed around long enough to get frosted. For my 14-month-old granddaughter, I now make them. They are wonderful and silky! Usually, I multiply the recipe.

Ingredients
- 3 large russet potatoes, scrubbed
- 2 tablespoons olive oil
- 1 small onion, diced
- ½ medium red bell pepper, diced
- ½ medium green bell pepper, diced
- 1 clove garlic, chopped
- 3 tablespoons salted butter
- 1 tablespoon chopped fresh thyme
- 1 teaspoon Cajun seasoning, or to taste
- 2 tablespoons chopped fresh flat-leaf parsley
- salt and freshly ground black pepper to taste
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Pierce potatoes with a fork and place on a baking sheet.
- Bake in the preheated oven until tender, about 1 hour. Let cool completely, 15 to 20 minutes. Dice potatoes, leaving the skin on.
- Heat a large cast iron frying pan or nonstick skillet over medium heat. Add olive oil. When hot, add onion, bell peppers, and garlic. Saute until veggies have softened, 3 to 5 minutes. Add potatoes, butter, thyme, Cajun seasoning, salt, and pepper. Cook, stirring occasionally, until potatoes are golden brown, 10 to 12 minutes. Top with parsley.
- You can bake the potatoes the day before you prepare this dish.

I like the flavor of it mostly but really wasn’t much different than what I normally make. But the difference is : I don’t go to all that trouble of putting it in the oven first. In the main picture on here there are no red bell peppers or any kind of peppers or onions it doesn’t look like. It just looks like potatoes

I wanted to love this but I really do prefer the home fries to cook a long time in a lot more oil and get that super crispy side. The seasoning was great & I loved the veggies!

12.12.20 Had these for breakfast today with sausage patty-hot pepper jack cheese on an English muffin, half an orange, and a glass of cranberry juice. I didn’t bake the potatoes, simply cooked them whole in the microwave saving a lot of breakfast prep time. I’d chopped some parsley but just forgot to garnish the potatoes. We really enjoyed this recipe, that little bit of Cajun seasoning brings great flavor to home fries. I did sprinkle on some paprika to give them a bit more color. My husband liked this recipe. The potatoes were spicy and the peppers and onion added a lot of flavor. I was in a hurry and decided to use the air fryer. I mixed 1 Tablespoon of olive oil along with the Cajun seasoning, garlic, thyme, and parsley. To save time , I sprayed the inside of the air fryer with Pam and then preheated the Air Fryer for 5 minutes at 350 degrees. I added the potatoes and baked for 9 minutes. I then tossed the potatoes and baked for another 7 minutes. Depending on the size of the potatoes you might have to cook a little longer. Meanwhile, melt 2 Tablespoons of butter. Place the potatoes in a bowl and toss with butter.
These potatoes were delicious! All flavors blended together so well. I did want a lot more Cajun seasoning, so I just sprinkled until I got the taste I was after.
