Ingredients

  1. 4 ounces linguine pasta
  2. 2 skinless, boneless chicken breast halves
  3. 2 teaspoons Cajun seasoning
  4. 2 tablespoons butter
  5. 1 red bell pepper, sliced
  6. 1 green bell pepper, sliced
  7. 4 fresh mushrooms, sliced
  8. 1 green onion, chopped
  9. 1 cup heavy cream
  10. ¼ teaspoon dried basil
  11. ¼ teaspoon lemon pepper
  12. ¼ teaspoon salt
  13. ⅛ teaspoon garlic powder
  14. ⅛ teaspoon ground black pepper
  15. ¼ cup grated Parmesan cheese

Instructions

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook until al dente, 8 to 10 minutes. Drain.
  2. Cut chicken breast into strips. Place chicken and Cajun seasoning in a plastic bag. Shake to coat.
  3. Melt butter in a large skillet over medium heat. Add chicken and cook, stirring, until browned and almost cooked through, 5 to 7 minutes.
  4. Add bell peppers, mushrooms, and green onion. Cook, stirring, 2 to 3 minutes.
  5. Reduce the heat and stir in cream, basil, lemon pepper, salt, garlic powder, and black pepper. Heat through. Add cooked linguine, toss, and heat through.
  6. Sprinkle with Parmesan and serve.

I readjusted the original from the outset and instead of 2 breasts I cut them in strips and shook them up with LOTS of HY’s Cajun seasoning so that all strips were well coated. I usually make double recipe thus I stir fry veggies separately somewhat before adding to pot with chicken. Avoiding dairy, I use Oat cream instead. I also use olive oil instead of butter.

Only changes I did was use a red bell pepper instead of green because the store was out of stock, used 1/4 tsp for the ones that said 1/8 because I don’t have a measuring spoon that small, and used 6 mushrooms instead of 4 because they were small. We loved it, hubby wants me to add more mushrooms next time. I would at some point like to try it with chicken thighs because those are cheaper here.

This is one of the best dishes I’ve ever had. It’s one that you think came from a restaurant. I omit the mushrooms simply because my boyfriend doesn’t like them, so I’ve eaten this with and without. I must say, I prefer this without the mushrooms but that’s just us. This recipe is in heavy rotation at our house!

Love the recipe!!! I make this for my husband for special occasions, except with shrimp! The only thing I change is I add just a little flour to thicken up the sauce a bit. The flavor this pasta has is amazing!!!!!

I never leave reviews, but I had to for this one! This recipe is fantastic! I’m not a pro cook by any means, but this dish turns out restaurant quality every time, and it’s so easy! My husband and I love it! I usually double the recipe to have leftovers, but I still only use 1 red bell pepper and 1 green bell pepper. That’s enough for us. I also saute the veggies with the chicken a little bit longer than suggested since we like our veggies a little more tender. Just a personal preference. I also use some corn starch + a little water to thicken the sauce. It is great with any kind of pasta. We’ve tried fettuccine, farfalle (my husband’s favorite), penne, and cavatappi. All are delicious. Definitely a great meal to impress some guests. Just add a salad and garlic bread. *chef’s kiss*

I’ve been making this recipe for years! It’s easy and such a crowd pleaser. I made it often enough for my girls that they say “it smells like home!” Perfect as is, but you can add andouille sausage for a little extra protein and spice. I also like to thicken my sauce up a bit by adding a cornstarch slurry at the end and bringing to a simmer. Add to your bookmarks and enjoy!

Great recipe overall. I did do a couple of things differently. All fresh herbs and fresh lemon juice. No mushroom but added cherry tomatoes. I also added a little pasta water to help the sauce. Very flavorful! Will make again!
