Wonderful brownies with a cream cheese swirl and butterscotch chips on top, these are rich without being heavy.

Ingredients
- 8 ounces cream cheese, softened
- 2 ⅓ cups white sugar, divided
- 3 eggs, divided
- ¾ cup water
- ⅔ cup cocoa powder
- ½ cup butter
- 2 cups all-purpose flour
- ½ cup sour cream
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 1 (11 ounce) package butterscotch chips (Nestle® Toll House®)
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10×13-inch baking dish.
- Beat cream cheese, 1/3 cup sugar, and 1 egg together in a bowl using an electric mixer until smooth.
- Mix water, cocoa powder, and butter together in a saucepan; heat over medium-low heat until melted, about 5 minutes.
- Combine flour, remaining 2 cups sugar, 2 eggs, sour cream, baking soda, vanilla extract, and salt in a large bowl. Beat chocolate mixture into flour mixture until batter is smooth; spread into the prepared baking dish. Spoon cream mixture over batter and run a knife through the cream cheese mixture to spread into a marbled pattern. Sprinkle butterscotch chips over top.
- Bake in the preheated oven until the top is dry and the edges have started to pull away from the sides of the pan, about 35 minutes.
- In the picture, the cream cheese is not as “swirly” as it could be, but you get the idea. I forgot to butter and flour the pan one time but had sprayed with Pam(R) – they came out fine but stuck a little more to the pan.

I was looking for a recipe with Butterscotch and thought I’d try this one. I used a 9×13 pan and extended the cooking time.
Excellent recipe! I constantly get asked to make these again and again!
I made this as the recipe directed except that my pan was 9 x 13 instead of 10 x 13 so I cooked the brownies an extra 15 minutes. It was really quite jiggly at 35 minutes. The brownies were good but seemed as if the butterscotch chips sank to the bottom – because the bottoms seemed to have a more solid and quite sweet layer. The swirl effect appeared mainly at the top. My efforts to move it thru the batter were only mildly successful.
Definitely more of cake than a brownie. Tastes better than it looked.
I guess I will be making it again. I’m not enthused about making it again because it is labor intensive, but since the husband liked it so well I will be making it again.
I had such a good feeling about this recipe… unfortunately, it seems to have been wrong. I followed it without any changes. I haven’t tasted it yet, but (in order of importance to me) these are the things that haven’t worked: it didn’t get swirled, all that happened was a light brown layer over the dark brown of the brownie. All the butterscotch chips melted into a hard chewy lid, under which the brownie was still raw. All of it boiled over some 20 minutes into the baking and I had to remove it from the oven, transfer some to a smaller dish and pop it back in. The cooking time was way, way more than stated. It got stuck to the side and bottom of the dish. After all this, I’m wishing I’d just made regular brownies and saved the cream cheese for a different dessert.
I used semi-sweet chocolate chips instead because I didn’t have butterscotch chips. It turned out great! Definitely on the “cakey” side, but still good. This recipe is a keeper!

SOOOOOO DELICIOUS! This is more of a cake-like brownie, just just be aware. These little gems are so moist and full of flavor, as well as being perfectly chocolate-y. Hubby went CRAZY for these and he usually only gravitates towards plain ol’ fudge-y brownies w/ no additions (though, he does LOVE butterscotch anything)! I will def be making these again and again~YUM, YUM, YUM!!!!!!!! Thanks for sharing. 🙂
