Ingredients

  1. cooking spray
  2. 20 ounces 99% fat-free ground turkey
  3. 1 (6 ounce) package stuffing mix (such as Kraft® Stove Top®)
  4. 1 cup low-sodium chicken broth
  5. 2 tablespoons buttermilk
  6. 2 tablespoons Italian seasoning
  7. salt and ground black pepper to taste

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Spray 12 muffin cups with cooking spray.
  2. Combine turkey, stuffing mix, chicken broth, buttermilk, Italian seasoning, salt, and pepper in a bowl. Divide mixture among the muffin cups.
  3. Bake in the preheated until cooked through, about 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  4. Water can be used in place of the chicken broth, if desired.

Like others I agree it’s missing something and I figured it out- ketchup! I switched 2 TBS of ranch dressing powder for the Italian spices. It was quick and easy. Thanks for a quick, tasty, weeknight meal.

Made as described (though I did use gluten free stuffing mix (because of celiac), and it turned out great! Family really liked it, and we’ll be making it again for sure.

I made two different turkey muffins with this being one of them. I was originally partial to this one due to it not calling for an egg and using Stove Top over breadcrumbs. While these were good, I do feel something was missing. I think a handful of shredded cheese thrown in the mix would bump these up a notch. Overall though, good recipe and one I would make again.
