The meat in these slow cooker fajitas always turns out tender and delicious, and they will melt in your mouth. Serve with salsa, guacamole, or sour cream, if desired. If the spice is too intense, sour cream can assist.

Ingredients

  1. 2 cups mayonnaise
  2. 1 cup buttermilk
  3. 3 tablespoons white sugar
  4. 1 teaspoon celery seed
  5. ½ teaspoon ground black pepper
  6. 2 (16 ounce) packages shredded coleslaw mix

Instructions

  1. In a large bowl, stir together the mayonnaise, buttermilk, sugar, celery seed and black pepper. Fold in the coleslaw mix, and refrigerate until serving. This tastes best if it is refrigerated for a few hours before serving.

Just a tad on the sweet side, I’ll cut the sugar next time. Still, the buttermilk gives it a clean tang. Better than any bottled slaw mix I’ve used.

I think this is 2x the amount of dressing needed for the amount of cabbage. So I reduced accordingly. After a taste test I added a generous squirt of lemon juice and some freshly ground salt.

Very creamy, but good basic recipe that you can adjust however you like. I only swapped out buttermilk for 2 % milk/vinegar (about 1tsp vinegar for every 1/2 milk) because I just don’t use buttermilk so why buy a whole container? I grew up on KFC coleslaw so that is my go-to but nowadays most slaws aren’t this creamy so maybe cut way down on the mayo and milk. You can always add little by little. I also added a couple squirts of lemon juice and twice as much black pepper as it calls for. Finally, this makes a LOT so cut in half unless you’re bringing this to a big family picnic or something.

I found this really bland, so I made the following changes: added sugar, lemon juice and finely chopped onion. I don’t have quantities, I just experimented until I liked it. After the additions, I liked it better than any other coleslaw recipe I’ve ever tried!
