Butter Tart Shortbread Bars

While searching for a recipe that did not call for cream cheese, I developed this Buffalo chicken dip with sour cream. Here is what I came up with since I couldn’t locate one.

Ingredients

  1. ⅞ cup butter, softened, or as needed
  2. ¼ cup confectioners’ sugar
  3. 2 cups all-purpose flour
  4. ¼ teaspoon salt
  5. 2 eggs
  6. 1 cup brown sugar
  7. 3 tablespoons butter, melted
  8. 1 tablespoon vanilla extract
  9. ½ cup raisins

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Beat 7/8 cup butter and confectioners’ sugar together with a spoon in a large bowl until smooth. Stir in flour and salt. Press mixture into a 9-inch square baking pan.
  3. Bake in the preheated oven until lightly golden, about 14 minutes. Remove to cool 10 for minutes, leaving oven on.
  4. Beat eggs, brown sugar, 3 tablespoons melted butter, and vanilla extract together in a bowl. Sprinkle raisins over cooled crust; pour egg mixture over raisins.
  5. Bake in the preheated oven until top springs back when touched, about 30 minutes. Cool completely before cutting into bars.
  6. If dough seems too dry, stir in 1 to 2 tablespoons softened butter.

Tasted yummy. I used goji berries instead of raisins and it came out great. This did stick pretty badly to the pan so I’d recommend prepping the pan really well or lining with foil

Butter tart and shortbread? Together? Yum….I had to try it. I followed the recipe exactly. When I poured the butter tart filling onto the shortbread crust I nearly went back to make more (filling). It looked very skimpy. I decided, however, to follow the recipe exactly the first time. The taste was just okay. The shortbread made it pretty dry. I think next time I would double the filling recipe….simply to counter-balance the dryness. Overall, not a disaster but somewhat disappointing.
