Butter Poached Lobster Shooters

Ingredients

  1. 4 pounds salted butter, clarified
  2. 4 to 6 fresh Maine lobster tails
  3. 3 garlic cloves
  4. 4 fresh lemons, juiced

Instructions

  1. Reserve 1 cup of clarified butter and try to keep warm.
  2. Place lobster tails in a large pot and cover with the remaining butter. Add 3 cloves of garlic to the pot. Poach on a low heat until the lobster shell changes color and meat is cooked. Allow to cool slightly and harvest meat from tails. Chop meat into bite-size pieces.
  3. While meat is still warm, assemble the shooters. In shot glass pour a bit of the reserved warm butter into each glass. Top with lobster meat and drizzle with a bit of the lemon juice.

Great recipe! I modified it by using a deeper pan and less butter. I used two lbs. of *unsalted* butter and clarified it myself. I added salt later. This was wonderful for a business meeting and clinched the deal!

Haven’t seen an appetizer recipe that is better than this. Butter, lobster and a squeeze of lemon juice. Perfect. Again, wish chef/caterer would have been on with Paula. Seemed weird with her there by herself talking about her birthday party. Liked the flower softballs that were on the plate. Really cool.

I think I have died and gone to heaven. So elegant and easy. We added a splash of Tabasco in some. Great simple and delicious appetizer. I love how the caterer displayed them in the square shot glasses and what were those cool flower balls on the platters she used? My friends and I love Paula, but would love to see her talk more about plate garnish ideas like that.
