Yield: 4 servings

Ingredients

  1. cooking spray
  2. 1 (20 ounce) package ground turkey
  3. 1 small onion, grated
  4. salt and ground black pepper to taste
  5. ¼ cup butter
  6. ½ cup hot pepper sauce (such as Frank’s RedHot®)
  7. 1 teaspoon garlic powder, or to taste
  8. 1 teaspoon onion powder, or to taste
  9. 1 cup sour cream
  10. ½ cup mayonnaise
  11. ½ cup blue cheese crumbles
  12. ½ teaspoon garlic powder, or to taste
  13. ½ teaspoon onion powder, or to taste
  14. 1 pinch black pepper, or to taste

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Line a 9×13-inch baking pan with aluminum foil; spray lightly with cooking spray.
  2. Combine ground turkey, grated onion, salt, and black pepper in a large bowl; mix to combine. Transfer turkey mixture to baking pan and shape into a loaf.
  3. Bake meatloaf in the preheated oven until light golden, about 40 minutes.
  4. Melt butter in a small saucepan over low heat. Stir in hot pepper sauce, 1 teaspoon garlic powder, and 1 teaspoon onion powder. Pour evenly over meatloaf.
  5. Return meatloaf to the oven and cook until flavors are absorbed, about 5 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  6. Combine sour cream, mayonnaise, and blue cheese crumbs in a bowl to make blue cheese dressing. Season with 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and black pepper. Serve alongside meatloaf.

This was tasty.. not too spicy and definitely had the buffalo taste to it. My only issue with this is the texture of the meatloaf. This is more like a baked turkey burger than a meatloaf… and it was very difficult to cut without it crumbling. This is because this recipe is missing a binder.. crumbs, almond meal, crackers.. ground oats…egg.. anything to hold it together. I will make this again as I like the taste.. but with crumbs and egg added
