Buffalo Chicken Macaroni and Cheese

Macaroni and cheese was revved up. A simple, quick method to use leftover chicken (allrecipes.com’s slow cooker buffalo chicken leftovers are ideal).

Ingredients

  1. ½ pound cubed cooked chicken
  2. 2 tablespoons hot sauce, or to taste
  3. 2 tablespoons ranch dressing, or to taste
  4. 1 (7.25 ounce) package macaroni and cheese mix
  5. ¼ cup margarine
  6. ¼ cup 2% milk
  7. 2 stalks celery, chopped
  8. 2 tablespoons crumbled blue cheese

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Mix chicken, hot sauce, and ranch dressing together in a bowl until coated; set aside for flavors to blend.
  3. Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain and transfer back to the pot. Stir margarine, milk, and cheese powder into pasta until sauce is smooth.
  4. Pour half of the macaroni and cheese into an 8-inch square casserole dish; top with chicken mixture, celery, and blue cheese. Spread remaining macaroni and cheese on top of blue cheese layer.
  5. Bake in the preheated oven until chicken is warmed and casserole is bubbling, about 15 minutes.
  6. Top the macaroni and cheese with another layer of celery and blue cheese before baking, if desired.

My kids loved it! They have been asking for me to make it again! I only gave it fours stars because I did not add the celery or blue cheese. I do not have either of those ingredients and my kids do not like celery cooked or blue cheese. Instead I added cheddar cheese. A great way to use leftover rotisserie chicken!

Tried doubling the recipe and making it in a 13×9, turned out well. Also shredded the chicken instead of cubing it

I didn’t have Mac and cheese in the box, so I made my own Mac and cheese. Didn’t have blue cheese either, so just topped with cheddar and some panko bread crumbs. Both my hubby and my son inhaled it!! Thanks!

What a great way to take a plain box of mac and cheese and give it that wow factor. Recipe was super simple with left over chicken . Hubby really liked this one.

My granddaughter and I stumbled across this recipe while looking for something to make for lunch. Since both of us are fans of the blue box mac & cheese we decided to give it a whirl and the results were spicy goodness. I didn’t have blue cheese on hand so I used Mexican crumbling cheese. If your not a big fan of heat I would cut the hot sauce back to one tablespoon.
