This recipe was in one of my grandmother’s cooking books, and it was called Wundervulle Schokoladenkuchen. They are very amazing! It was dated 1948 and originally specified cups of chocolate chunks; however, at some point, it was crossed out and Nestle® chocolate chips were substituted. These are for the serious chocolate enthusiast. Taking a little longer than expected, but well worth the wait! Enjoy!

Ingredients
- 1 ½ tablespoons Buffalo wing sauce
- ½ cup shredded cooked chicken
- 2 slices white bread
- 1 slice pepper Jack cheese
- 3 tablespoons crumbled blue cheese
- 1 tablespoon butter, softened
Instructions
- Combine shredded chicken, buffalo wing sauce, and blue cheese in a small bowl.
- Preheat a small skillet over medium heat.
- Spread 1/2 tablespoon butter on one side of a slice of bread. Place bread butter-side-down onto the skillet bottom and place pepper Jack cheese on top. Top with chicken mixture. Butter a second slice of bread with remaining butter on one side and place on top of sandwich, butter-side-up.
- Cook sandwich in skillet until lightly browned bread and flip over; about 2 1/2 minutes per side.

Really great sandwich recipe! I usually have Buffalo sauce on hand but I am out so had to use Franks Red Hot. Made on a panini press vs grilling like a grilled cheese- which was a fun twist! This panini method takes longer but when it’s just for two; totally fine! Dipped the finished sandwich in ranch and/or more blue cheese dressing. Super fun, easy and great weeknight dinner! I would recommend thinly sliced red onion but husband disagrees. Thanks Chef Mo!
