Brussels Sprout and Bacon Hash

Ingredients

  1. 12 ounces thick-cut bacon
  2. 1/2 yellow onion, coarsely chopped
  3. Kosher salt and freshly ground black pepper
  4. 12 ounces Brussels sprouts, shredded
  5. Juice of 1/2 lemon
  6. Hot sauce, for serving, optional

Instructions

  1. In a large skillet, cook the bacon over medium-high heat until crispy, 6 to 8 minutes. Transfer to a plate to cool slightly. Pour off most of the bacon fat into a heat-safe bowl, leaving a thin layer of fat in the skillet.
  2. Return the skillet to medium-high heat and cook the onions until translucent, 5 to 7 minutes; season with salt. Add the Brussels sprouts and cook, stirring occasionally, until browned and tender, another 7 to 10 minutes, adding more bacon fat if the pan seems dry. Coarsely chop the bacon and then stir it into the Brussels sprouts. Add salt and pepper to taste. Finish with the lemon juice and serve with hot sauce if desired.

This is so delicious!!!
It does take time to cook the bacon. Using the food processor to slice the Brussel sprouts made them ready to use in the blink of an eye! You can’t go wrong with this recipe. It was a hit!

The name is this recipe is incorrect. It is called a brussel sprout slaw… Not a hash.
