Ingredients

  1. cooking spray
  2. ½ cup packed brown sugar
  3. ½ cup ketchup
  4. 1 ½ pounds lean ground beef
  5. 2 large eggs
  6. 1 small onion, chopped
  7. ¾ cup milk
  8. ¾ cup finely crushed saltine cracker crumbs
  9. 1 ½ teaspoons salt
  10. ¼ teaspoon ground black pepper
  11. ¼ teaspoon ground ginger

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 5×9-inch loaf pan.
  2. Press brown sugar into the bottom of the prepared loaf pan and spread ketchup over top sugar.
  3. Mix all remaining ingredients thoroughly in a mixing bowl and shape into a loaf. Place on top of the ketchup and sugar crust.
  4. Bake in the preheated oven for 1 hour or until juices are clear.

I have not made this version, but my Mother had been making since the early 70’s. The only thing different is there is no ginger and it only calls for 1 egg. It was called upside down meat loaf. After it was cooked you were supposed to flip it upside down on a platter. That way the sauce would be on top. I’m never brave enough to do it. I always was afraid I will have a mess to clean up. She got the recipe from our local radio station. It is my favorite meat loaf. My Mother has been gone for almost 10 years. This will always our go to comfort food. Add some nice fluffy mashed potatos and a veggie. Mine has to be carrots. Thanks Mom for teaching us how to make this.

This is very good. It’s almost like my mother used to make it. She also added bacon to the top and used half the brown sugar. I like this really well but next time I’ll try it mother’s way and see if it tastes just like hers. It’s one of the few recipes of hers that I didn’t get.

I made it with 1 lb ground beef and 1 lb sweet italian sausage, added a little extra saltines and a little extra ginger. Yummy!

I’ve used this recipe for years. I do modify it a little by using BBQ sauce instead of ketchup and the last 10 minutes of baking, I add shredded cheese to the top.

We’ve loved this recipe for years. My only tweaks: I used Goldfish crackers I put everything but the meat and the sauce in a blender so everything is an even consistency. (Sensory issues in the family). I also am a little heavy handed w the ginger.

This wasn’t bad, it just wasn’t anything special. Maybe it’s because of its midwestern origins, but it was remarkably bland. I doubled the ginger and pepper and it was still lackluster. The brown sugar made it very sweet. I know that ketchup is traditional on meat loaf, but come on. This isn’t Des Moines in 1945.

One tip – I don’t put the brown sugar and ketchup on the bottom of the pan . Spread it on top.

I tried making this the first time for 5 kids with the topping on top like other reviews suggested and they loved it. I tried making it again just as the recipe wrote with the brown sugar and ketchup on bottom and I loved it even more. This recipe is amazing.

Love the meatloaf. Mixed the brown sugar and ketchup and added to the bottom of pan. Also added 1tbsp. Worchestire sauce. Taste delish!

We loved this. I only had 1 pound of ground beef so I chopped up some fresh mushrooms and added those for additional volume. I did add some worcestershire to the meat mixture and would probably cut the brown sugar a bit as it is pretty sweet but overall great taste and easy.

I made this meatloaf almost as written except for doubling the amounts to make 2 loaves and I also used club crackers instead of saltines. My husband never liked meatloaf but now this is one of his favorite meals..

My family LOVES this recipe. The only change I made is that I add a Lipton onion packet. One of my kiddos says he doesn’t like onion 🙂 so instead of using a chopped onion, I use the stuff that he can’t see. And he loves it! Go figure. I give this recipe 5 stars!
